Makhana Raita: A Healthy and Delicious Twist on a Classic

Makhana raita, a yogurt-based dish featuring roasted foxnuts (makhana), offers a delightful and nutritious alternative to traditional raita options like boondi raita. This recipe highlights methods to maximize the health benefits of makhana while creating a flavorful accompaniment to your meals.

Roasting – The Secret to Enhanced Bioavailability

Research suggests that roasting makhana can significantly increase the bioavailability of certain minerals, particularly iron and zinc. A study published in the Journal of Food Science and Technology found that roasting foxnuts for 5 minutes at 160°C led to a significant increase in iron and zinc bioavailability.


The Makhana Raita Recipe:

Ingredients:


1 cup foxnuts (makhana)

1 cup plain yogurt

1 teaspoon homemade mint salt (recipe shared on the channel)

Chopped fresh mint leaves (optional)

Water (optional)

Instructions:


Roast the Makhana: Preheat your air fryer to 160°C (320°F). Spread the makhana in a single layer and roast for 5 minutes.  Remmeber to cover while roasting makhana in airfryer.

Alternatively, dry roast them on a tawa (griddle) or skillet over medium heat for 5-7 minutes, stirring frequently, until golden brown and fragrant.

Pound the Makhana: Once cool, place the roasted makhana in a mortar and pestle or a zip-lock bag. Gently pound the makhana to break them into smaller pieces. Avoid turning them into a fine powder.

Prepare the Raita: In a mixing bowl, whisk the yogurt until smooth.

Combine and Adjust: Add the pounded makhana, homemade mint salt, and chopped mint leaves (if using) to the yogurt. Mix well.

Adjust Consistency: If desired, add a little water to achieve a thinner consistency. Taste and adjust the seasoning with additional mint salt if needed.
