No I do not claim to have got the perfect Parle style coconut biscuits, but I have certainly come closer to replicating the taste and crunch of these coconut cookies. I have been trying out various cookie recipes, for I am a biscuit lover. I love to enjoy my tea with cookies - though I eat only one or two biscuits.

My love for biscuits started during childhood. We would savor glucose Bakeman's biscuits with milk during those days. The story is simple - there was a Bakeman's factory near Patiala, and we would buy loads of biscuit packets whenever we would be crossing the factory while heading to and fro Patiala. Rajpura is my mom's home, and as kids, we would love to visit nana-nani (maternal grandparents) during vacations. It was then that we would travel from Patiala to Rajpura by a moped (2-wheeler) that papa would ride and all of us would anxiously wait for the biscuit factory.

It was then that we started trying out different biscuit brands and varieties, and coconut biscuits was one of them. My love for cookies is eternal!

So let's come back to the coconut biscuit recipe with jaggery and whole wheat flou, which uses whole wheat flour. One point that you would notice in my recipes is the use of healthy grains. I never use refined flour or maida. So all of my posts comprise no maida recipes.

Yes, I have tried atta coconut cookies and coconut oatmeal cookies several times using different combinations and got very good results as well as reviews on them. But this time it's different. I have been trying to get my hands on healthy biscuit recipes with jaggery so I can replicate the packet style cookies even while using whole wheat flour. This is a keeper's recipe - no, these aren't chewy oatmeal coconut cookies, but crispy oatmeal cookies with coconut.


Coconut adds a distinct flavor to any recipe it is part of. I am in love with coconut since my marriage in the coastal state of Odisha. It was only after marriage that I developed a liking for coconut. Surprisngly, as opposed to most claims, coconut and coconut oil are natural wonders. Check for coconut oil benefits here.

Healthy Oatmeal Cookies With Coconut Ingredients
1 cup= 200 ml
atta coconut biscuits

1 cup- atta (whole wheat flour)
1 cup- dry/dessicated coconut powder (you may use leftover coconut powder after extracting coconut oil)
1/2 cup- oats powder  (grind oats to powder)
5 tbsp- cold butter or desi ghee (clarified butter) - you may even use (3 tbsp ghee+2 tbsp olive oil)
2 tbsp- Jaggery golden syrup (homemade) - check the video recipe below to make your own golden syrup at home
1 tbsp- milk -if the dough looks dry (or coconut milk that remains at the bottom after extraction of coconut oil)
2 tbsp- raw cane sugar powder or more/jaggery powder
1 tsp- baking powder



Oatmeal Coconut Cookies Bake Procedure
This coconut cookies recipe can come in handy after you have extracted coconut oil at home. You can easily use the leftovers for this recipe.
  1. Sieve together atta, baking powder, oats powder, and coconut powder.
  2. Mix raw cane sugar.
  3. Add cold butter and rub it into the flour. This step is very important, so do it well.
  4. Mix milk and golden syrup and pour the mix over the crumbled flour mixture.
  5. Again rub everything well with hands.
  6. Check if the dough consistency is okay. We do not want to knead it. Just collect all the ingredients. It should not be sticky. If the dough feels dry and rough, add 1 more tbsp of milk. 
  7. It should be a soft dough but not sticky. 
  8. Make two logs and cover them tightly with aluminum foil or butter/parchment paper.
  9. Refrigerate for 3-4 hours.  The longer you refrigerate, the better the results. I refrigerated it overnight.
  10. Before rolling out the dough into cookies, preheat the oven (mw convection) at 170 degrees for 10 mts.

  12. Meanwhile, roll out the dough into a thick chapati. The dough may feel hard since it uses less fat. So it is a good idea either to slice it as is or leave it outside for 5 mts to soften. Or add 1tsp of milk and then roll it out.
  13. I made two batches of coconut biscuits - one thinner version like Parle and a thicker version like bakery style coconut cookies. Choice is yours.
  14. I used a bottle cap to cut the dough into round cookie shapes. You may give any shape - but the round one looks more like market bought packet biscuits.
  15. I used a knife to carve out design on top of the cookies.
  16. Place each cookie at a distance from each other on a greased baking tray - this helps in even baking of biscuits. If baking in an airfryer, keep the basket ready for baking.
  17. Bake or airfry for 15-20 mts at 160 degrees. Enjoy crispy, crunchy Parle style coconut biscuits with atta and jaggery.

  3. I m making these..the dough logs are kept in fridge right now. I doubt it can be rolled out easily...very crumbly like texture..what is the perfect way to shape them.. please reply ASAP.

    1. I am sorry for the delay in response. How does the dough look before refrigeration? It should be soft, but not too soft. So you can add extra milk tablespoons to make it soft. Otherwise, allow the cookies to sit on the counter after removing from the refrigerator. The dough should turn soft and become easy to roll out.
