Well, I have named these diet ladoos, because these are

  • refined sugar-free, which is only calories - empty calories to be precise
  • subtly sweet from jaggery, which is mineral rich and unrefined (I use Organic jaggery)
  • slightly tangy from mineral-rich black salt 
  • crunchy from toasted seeds and nuts, which are loaded with iron, zinc, magnesium, calcium, and phosphorus 
  • kid-friendly since the ingredients aren't ground fine, but kept grainy for those nibbly bites that would instantly appeal to kids
  • butterless, oil-free, and use no ghee - no saturated fat (the only fat here is the natural fat from seeds and nuts that remains locked in these yummy bites to give you plenty of benefits - toasting needs and seeds unlocks healthy oils)
  • not diabetes friendly - kindly do not use this recipe for diabetics

Let's come back to the diet ladoo recipe: It's a versatile sugarless ladoo recipe. This means if you do not have one ingredient handy, you can always substitute the same with the other.

Ingredients

1/4 cup- toasted/dry roasted sesame seeds (til)
1/4 cup dry roasted watermelon seeds (magaz)
2 tbsp- dry roasted pumpkin seeds
1/2 cup- almond meal (check this video to make quick almond meal at home- without soaking)
2 tbsp- sprouted & roasted ragi flour (sprouted finger millet) (skip if you do not have this handy or add an equal amount of oats) - here's how you can sprout finger millet at home
1/2 cup- jaggery powder
2tbsp- water
2 pinches of black salt

How to make diet ladoos: sugarless Indian sweet recipe 

Dry roast each of the seeds separately.
Allow them to cool down.
Turn them to coarse powder.
Do not grind much, else, the seeds might start oozing oil. We need their grainy texture.
Mix with almond meal and sprouted, roasted ragi flour. Keep aside.
Now take a utensil and add jaggery powder to it.
Heat on a medium flame.
Add salt and mix.
Next add 1 tbsp of water and stir vigorously.
Then add the remaining 1 tbsp of water and keep stirring constantly until you start to see the jaggery mixture bubbling.
Turn off the flame.
Add the powders in batches - mix.
Make ladoo shapes when it is still warm. But do not burn your hands.

Dhokla needs no introduction. The super easy recipe makes a great snack, loved by young and old and kids.I never loved dhokla until I prepared this delicious Gujarati snack myself.
