Started with sourdough a few months ago - the first bake with sourdough was focaccia that was so very sour that I literally started wondering why would people eat sourdough when it was too sour in taste (they say, thus the name - sourdough).  

But when you take something to heart and wish to be better at what you do everytime, you LEARN and UNLEARN a lot many things. 

Now that I am experimenting with sourdough and learning from experience, my SOURDOUGH is no longer SOUR.

It is the BEST thing on earth to learn and grab.


BELIEVE YOU ME, friends. If you start with sourdough, you will never return to using commercial yeast even. The best thing (apart from a sourdough starter being your homegrown baby yeast), it is a NEVER-ENDING story.

You will never run out of stock. It is FOREVER.

What stands out in this sourdough bread is that it is chemical free, loaded with good things, no knead, and easy to make.

Well, the starter or levain is natural yeast that you have grown at home. It is the best thing to do if you want to give your family a healthy bread kulcha without chemicals. No baking powder/soda or yeast bread with sourdough tastes absolutely sumptuous.

Ingredients of no-knead bread sourdough India

1 cup- 240ml

1 /2cup- whole wheat flour

2 tbsp- oat flour

1 tbsp- whole wheat starter

1/4 tsp salt + little extra for topping

1/4 cup  water

1.5_2 tbsp- extra virgin olive oil

veggies of choice


Mix water with oil, salt, golden syrup, whole wheat starter, and oats. Set aside for 10 minutes.

Add starter and whole wheat flour. Mix and set aside for 10 minutes.

Then gather into dough and brush with oil.

Store in an airtight container in the refrigerator for 6-10 hours. Slow proofing will release flavors and prevent it from becoming sour.

Then after bulk fermentation, remove from the refrigerator. Bring the dough to room temperature.

Let it double. Took mine 2 hours to double after removal from the fridge.

Punch gently. Roll out gently like a roti.

Fold into a round ball and gently press in a greased baking tin.

Poke with knuckles or fingers or thumb.

Decorate with onions, tomatooes, basil, herbs, olives, berries, cherries, or veggies of choice (smeared in little oil, salt, oregano, red chilli flakes).

Top the bread with sesame seeds Then spread the veggies.

Let it rise for 45-60 minutes.

Preheat oven, airfryer, otg to 200 deg c for 10 minutes.

Brush with oil.

Bake for 20-25 minutes.

Brush with oil again and bake for 5 minutes more.

Q. Can I omit oats and make it a whole wheat sourdough focaccia bread in Indian climate?

Absolutely, yes.  have mentioned this in the video already. To substitute oats, you may use only 1 tbsp of whole wheat flour instead of 2 tbsp oats powder.

 Q. I am looking for an easy sourdough focaccia Indian recipe. How difficult it is to make a healthy whole wheat bread at home?

Well, this is a no-knead focaccia bread recipe that is ready in a jiffy and does not need a lot of effort on your part. Not to mention, being a sourdough and loaded with nutritious whole grains, it is a healthy bread recipe in India.

Q. I am looking for excess sourdough starter recipes. How do we use sourdough discard?

When your whole wheat sourdough starter is ready, you need to continue feeding it every 3rd day in the refrigerator. This will help keep it sourless.  Additionally, you can use the discard wherever you wish to and make flatbreads, focaccia, pizza, crackers, kulcha, balzama bread with it, The options are endless.

Q. Is it a sourdough discard focaccia recipe ?

Well, you may call it a discard recipe because I fed my starter in the morning and it rose within 2 hours of feeding after removal from fridge. Before putting it back in the refrigerator, I need to discard and feed it again. The discard is what you can use to make this whole wheat sourdough bread in India. That's how I came up with the idea of making sourdough no-knead focaccia India.

Q. How can I make a quick focaccia with sourdough starter ?

Well, if you do not have the wait time, there is an option to make sourdough bread quickly in India. Use lukewarm water in place of normal water. Add all the ingredients. Let the sourdough focaccia bread dough rise at room temperature for an hour or two. It will rise quickly. But remember, it might get sour quickly too. So just keep an eye on when it rises. Punch and shape it as soon as possible and let it sit for the second rise.  Bake the sourdough focaccia as soon as it doubles.
