Jowar Recipe of Crackers [No Maida Maska Chaska Sorghum Cookies in Air Fryer]

Looking for another sorghum recipe in India? This jowar crackers recipe of maska chaska is inspired by my dear Parshotam Kaur aunty's barley Fifty Fifty biscuits. In aunty's words, "After eating it you all will forget market bought fifty fifty or krack jack." That tells you all about the healthy jau cookies. So taking inspiration from her salty biscuits recipe, I have come up with jowar cookies masala chaska recipe. A cookie lover would instantly fall in love with these savory bites flavored with carminative cumin and flavorful kasuri methi.

Baking with sorghum flour

This is another example of how to bake jowar cookies. Is baking with sorghum flour difficult? My experience says it is the easiest to bake with jowar. In fact, you can bake cookies, cakes, crackers, pies, and what not with this amazingly healthy and nutritious sorghum flour.

1 cup=240 ml

1/2 cup- jowar

2 tbsp- solid ghee

2.5 tbsp- thick curd (add 1/2 tbsp extra only if the dough feels very dry)

1/4 tsp salt

kasuri methi, roasted jeera powder, black pepper powder

How is kasuri methi made?

Whip solid ghee along with 1 tbsp curd until it looks fluffy.
Add 1 tbsp more of curd and whip again.
Next, add salt, jeera powder and mix.
Sift jowar flour and mix.
Sprinkle kasuri methi or mint powder along with black pepper.
Gather jowar dough into a ball. If you cannot collect it into a ball, add 1/2 tbsp extra of curd.
Do not be tempted to add more curd or liquid; else, jowar crackers will come out as chewy.
Preheat oven, airfryer, convection, otg to 160 deg c for 10 min.
An airfryer needs preheating for 3-4 min only.
Cut inot shapes and bake for 8-12 min (more or less depending on your machine)
Since jowar flour is starchy and the recipe does not use any sweetener, the crackers could look slightly brown and will have a predominant whitish hue.
Let cookies cool down before munching on maska chaska.

In fact, all whole grains, including oats, contain phytates, which bind to minerals and make their absorption difficult for the body.  Soaking is the first step toward reducing anti-nutrients from millets. Soak for at least 6-8 hours to make digestion easier. Discard the soaked water and then proceed to the next step of cooking. My parents have inculcated in me good eating habits - home food is the best, they would day, preach and practice. This has become ingrained in my thoughts. I detest outside food, and yes, I dub it as market junk. One reason I love all homemade stuff - mommade food is the best. But w
