Healthy Kulfi Premix with Jaggery

Who doesn't crave a creamy kulfi in the peak of summer? But let’s face it—most store-bought options are loaded with refined sugar, preservatives, and artificial flavors. If you're seeking a healthier, additive-free version, why not make your own kulfi premix at home?



This easy, nutrient-rich premix uses wholesome ingredients like makhana, jaggery, and nuts—giving you a delicious base that can be stored and used anytime the kulfi craving hits.


Homemade Kulfi Premix: A Guilt-Free Summer Treat You Can Trust


Ingredients for Kulfi Premix:


2 cups Milk  

4-5 Green cardamom powder  

1 cup Makhana (fox nuts)  

1/2 Pistachios  

a few Saffron strands  

1 cup Jaggery powder  

1 cup Peeled almonds (for later)  

1/4 cup Sattu (roasted gram flour) powder (for later)


Step-by-Step Method:

In a heavy-bottomed pan, bring milk to a boil. Add cardamom powder, crushed makhana, and finely chopped pistachios.  

Let it simmer on medium heat until the milk reduces to half its volume. This concentrates the flavors and gives the mixture a rich, creamy texture.  

Once reduced, add saffron strands and jaggery powder. Continue to stir and cook until the mixture thickens to a dense, rabri-like consistency.  

Turn off the heat and allow the mixture to cool slightly.  

Spread the thickened kulfi base onto a sheet of butter paper.  

Air-fry this mixture at the lowest temperature setting until it dries out completely. This process dehydrates the base without destroying nutrients or flavor.


Once dried:

Crush the dried kulfi base into a coarse powder.  

Mix in peeled, finely chopped almonds and a few tablespoons of sattu powder.  

Store this kulfi premix in an airtight container in the refrigerator.


How to Use It:

Whenever you're ready to enjoy kulfi, boil milk and stir in a few spoonfuls of this premix. Adjust sweetness. I usually add stevia to make my kulfi sweeter and boil until it turns thick. Pour into kulfi molds or small cups, freeze, and enjoy. It’s nourishing, refined sugar-free, and perfect for kids and adults alike.
