Eggless Gluten-Free Healthy Orange Cookies Without Baking Powder, Soda:Refined Sugarfree, Chemical-Free Baking With Organic Ingredients


Here I come with another recipe to contribute to my baking without baking powder/baking soda series - eggless gluten-free orange cookies. Well, when it comes to cookies, I can't think anything but healthy cookies. When it comes to healthy cookies, I want to experiment with simple ingredients to give you a simple cookie recipe, which is easy to make/bake in a cooker, on a stovetop, and/or in an arifryer, oven, or convection. All of my cookie recipes without baking powder or soda can be tried with all appliances and equipment. You do not need fancy stuff here to bake deliciousness in your kitchen, do you? Na, you do not! Seriously.

Why need an electric mixer when you can prepare the dough with hands? After all, not everyone has the fortune to buy one. Worry not! These simple cookie recipes come to you with simple ingredients and require easily available equipment. Even a spoon/spatula can do the work of a whisk. In fact, when I did not have a hand whisk, I would use a spoon. I do have an electric whisk, but I am happy to use hand whisk!

Anyway coming back to the orange cookie recipe. Winter season comes with an array of fruits and vegetables. Oranges are one of my favorites. The vitamin C and antioxidant-rich oranges add amazing flavor to your bakes. I enjoy oranges as is more than adding them to my culinary experiments. But after I tried orange powder, I wanted to give orange cookie recipe a try too.

So the day was decided. Now I had to come up with a flour that I would combine oranges with. I decided to go gluten free with this simple cookie recipe, which is, of course, refined sugar free as well. I no longer buy white sugar, so all of my recipes use jaggery powder and other natural sweeteners or no sweetener at all. Remember my diabetes-friendly sugarless apple jam? Ummmmm...yummmmy!!

Why Did I Choose Brown Rice Flour?

Compared to white rice flour, which is primarily starch, brown rice is a highly nutritious grain that packs a good amount of vitamins and minerals. Whole grains, such as whole wheat flour, oats, and brown rice, are a complete package of nutrients that supply your body with required carbs, protein, fiber, and essential compounds, unlike refined flours that are literally stripped of their nutrients during the refining process.

Whole grains, such as brown rice flour, comprise all of the three elements that are essential to human health, including
Endosperm - Did you know the grain holds its protein, carbs, and some B vitamins in its inner part - the endosperm?
Bran - Have you heard that bran is the fiber-rich outermost layer of a whole grain with a good amount of iron, zinc, copper, magnesium, and B vitamins? There is some amount of antioxidants in bran. You can buy bran separately to add an extra amount of fiber to your meals.
Germ - Are you aware of the power that the grain's innermost layer packs? The germ is the innermost core that spurs the growth of the seed, which is packed with phytochemicals, vitamins, and healthy fats.

Brown rice vs White rice: Which is Healthier

If you think it's the color alone that differentiates the two types of rice, then you need to dig deeper into this.
Well, it' the color that you choose when it comes to buying rice, but there is more to rice shopping than the color alone. What's that?

Let's see!
Refining, milling, and polishing remove most of the essential nutrients from a whole grain - be it rice or wheat.
When rice undergoes processing, it loses all of its essential compounds, leaving behind a polished white look - which is merely starch. Starch does your body more harm than good. It's one reason eating white rice has become a sin these days, because the starch only adds to the calories without giving you any nutrients.

Similarly, whole wheat processing and refining leaves behind maida -most commonly known as all-purpose flour/white flour- which is nothing but empty calories. So when it comes to buying grains, go for whole foods- say whole grain!


Did you know those who eat whole grains (fiber rich) weigh less than those that indulge in refined flours? 
According to a study done by Harvard Medical School on Brigham and Women's Hospital and published in the American Journal of Clinical Nutrition, whole grains hold the key to maintaining a healthy weight.

In this 12-year-long study, weight gain of participants was inversely related to the intake of fiber-rich whole-grain foods. Rather, it was positively associated with the consumption of refined foods.

The study summarizes that women on a whole grain-rich diet tend to weigh less than those that ate less fibrous food.

Ingredients for crispy orange cookies without baking powder, soda

1 cup=240 ml= 130 grams
1 cup- organic brown rice flour or whole wheat flour
2 tbsp- homemade organic ghee (room temperature) -I make instant ghee in 5 mins 
2 tbsp- organic extra virgin olive oil
1 tbsp- orange juice
1/4 tsp- orange zest
1/4 cup or more-organic jaggery powder
1/4 tsp- organic black salt

How to make refined sugar free gluten-free healthy orange cookies without baking powder/soda

You need a hand whisk here. Even an electric whisk can be used. 
  • Whisk together ghee, oil, and orgnic jaggery powder. Make sure the jaggery is dry enough and does not have too much moisture. I have already done a video on what type of jaggery for baking works best. Check the video below. 

  • Next add black salt and whisk again. As you might have noted, most of my cookie recipes follow the creaming process. I find that this step is critical to baking without baking powder/soda.   • Add orange juice and zest and whisk again. Yes, you need to follow these steps exactly as mentioned here. 
  • Now it's time to sift brown rice flour here. If you do not have brown rice atta, you may use simple rice powder or substitute the same with chickpea flour, another gluten-free alternative.
  • Do not KNEAD. NEVER KNEAD any of my cookie dough if you follow my simple cookie recipes.
  • Cover the dough and keep it at room temperature. No need to refrigerate.
  • Preheat the oven/airfryer/convection to 160 degrees for 10 mts. I bake my cookies in an airfryer and preheat it for 5 mins only. You can preheat your airfryer for the same amount of time.
  • Make lime-sized balls and press gently with a fork. Or you can leave the balls as is and make gluten-free orange nankhatais instead. The orange cookie recipe works both ways.
  • Bake/airfry for 20-22 mins at 160 degrees.
  • Let your gluten-free beauties flavored with orange cool down completely before packing them in a jar of cookies. Of course, you are free to enjoy these orange cookies now.

    1. Hello dear, to bake on gas/stOvetop. You may do this in kadahi or cookier or tawa. Put sald/sand in cooker/kadahi or tawa, keep a stand or bowl on top of the sand/salt. Then on top of the bowl/stand, place the baking tray with cookies. Cover with a big utensil if baking on tawa and kadahi or lid if baking in a cooker. bake at medium flame for 10-14 mins. Check if they have turned golden around the edges. If not, bake for 2 minutes more. remove from the gas. Let them cool before removing from baking tray.
