Ingredients

1 cup 240 ml

1 cup dalia (broken wheat)

1)2 cup date palm jaggery

1 tbsp cacao powder

1)4 cup malai

elaichi for flavor (I have used annapurna or pandan leaves though)

1 cup water or milk to make dodha burfi even richer and denser

1 tbsp homemade beetroot powder

1/2 cup almond powder

Here's the video

Dry roast Dalia first and pulse to powder. I roasted in airfryer for 20 min at 160 deg c. Check, if done else, roast for 10 min more.

Now blend together jaggery, malai, and pandan leaves for flavor. Add 2 tbsp water. Blend and mix with Dalia powder.

Add more water and mix cacao powder and beetroot powder.

Set aside for 30 minutes.

After 30 min, add more water if the batter has thickened a lot. Pour into a greased baking dish and bake in a preheated airfryer or oven at 140 deg c for 40 min. Check if done.

An airfryer heats and bakes quickly. The Doda burfi might need for time in oven or otg.

Allow the healthy Dalia barfi to cool down before slicing. Otherwise it might crumble. You may even refrigerate it before cutting into pieces. Enjoy a healthy sweet this festive season.

What makes the Dalia recipe healthy?

As a rich source of fiber, cracked wheat aids in digestion. As a result, it aids in weight loss and weight management. It supplies your body with its regular dose of manganese. A rich source of protein and enzymes.

Cracked Wheat Benefits

Whole grains, such as cracked wheat, are a holy grail for weight loss, helping you maintain a healthy body weight. Also known as bulgar wheat, daliya or dalia comprises grains of wheat crushed into smaller pieces. These cracked berries of whole wheat are a rich source of calcium, zinc, phosphorus, magnesium, copper, iron, folate, vitamin B1, B2, B3, and fiber.

The magnesium content in cracked wheat helps activate certain enzymes that play a key role in balancing out insulin and glucose levels. This is the reason wheat for diabetics is a safer, healthier alternative to rice. There are numerous healthy cracked wheat recipes to help you maintain blood sugar and manage diabetes.

The body requires insulin to break down sugar in food. When the body is not able to produce enough insulin, it could cause high blood sugar levels, which risk causing diabetes. By nourishing your body with whole grains, you are essentially providing it with the means to control blood glucose levels and cholesterol, preventing diabetes from developing.

According to a research study done by Harvard Medical School, women taking whole grains, such as whole wheat flour or cracked wheat, regularly had consistently lower weights compared to those who used refined flour.

I am already in love with this dalia burfi that packs a powerful punch of nutrition -

  • fiber
  • minerals
  • proteins

Can we use the soaked water for millets? Does millet need to be soaked?

Do millets contain anti-nutrients? Yes, they do. In fact, all whole grains, including oats, contain phytates, which bind to minerals and make their absorption difficult for the body. Soaking is the first step toward reducing anti-nutrients from millets. Soak for at least 6-8 hours to make digestion easier. Discard the soaked water and then proceed to the next step of cooking. Remove foam from top to reduce gassy elements from millets.  How long should millet be soaked before cooking? Soaking the millets overnight is a safe practice. Soaking breaks down the phytic acid in millets or for that matter grains and nuts. Phytic acid hinders the absorption of minerals and nutrients in food, including calcium, iron, and zinc. How? Phytates bind to minerals and nutrients and make their absorption difficult in the gut. Your tummy finds it tough to digest millets in that case. So soaking millets and draining off that soaked water makes it easier on your tummy.  Are millets safe for thyroid? Does
