Well, until I had tried out the ragi rusks with dates, I wasn't too sure how a biscotti with millets might taste. But to my surprise, the ragi Indian toast tastes the same as saunf rusk with no flavor difference from the typical maida rusks that you buy from the market. So one try at making ragi rusks without yeast is a must.

I make my own ragi flour at home. This time I have not used sprouted ragi flour for saunf rusk, but for the ragi biscuits with jaggery that I shared a few days back, I had used my homemade sprouted ragi atta.


This is homemade ragi flour that I often make after soaking the millet overnight, drying it the next day in the sun or under the fan until it is fully dried before grinding the millet to powder.' This homemade millet powder is more nutritious than your store-bought flours.

Why Make Millet Flours at Home

All food sources have some amount of anti-nutrition factors. These in large quantities can inhibit nutrition absorption or can trigger thyroid dysfunction. But processes like soaking, germination, roasting reduces these anti-nut factors. If your thyroid levels are very higher than normal, it is better to consume sprouted grains and legumes, that include millets too. I am a certified nutritionist. Ingredients for Ragi recipe of rusks

1 cup- 240ml 1cup-ragi (finger millet flour) 1/4 cup or 3 tbsp oil- I have used 3 tbsp olive oil 8-10 dates- according to taste or sweetener of choice (SOAK OVERNIGHT or for 30 minutes in hot water) 1 tsp- fennel seeds 1/2 cup+1/4 cup- water 1/2 tsp- baking powder 1/4 tsp- baking soda 2 tbsp flaxmeal plus 5 tbsp water


How to make rusk at home with ragi flour (millet rusk recipe indian with dates]

Soak dates overnight or steep in hot water for 10minutes before grinding it to paste with 1/2 cup of water. Add sauf or fennel and extra virgin olive oil or any oil of preference. Turn into paste.
Soak flaxmeal in water for 10 minutes to make flax egg.
Mix flax egg with the dates paste. Add ragi flour, baking powder and soda.
Mix. Preheat the oven, airfryer, otg, convection to 180 degrees for 10 minutes.
You may bake ragi rusk in cooker or kadahi. If so, Layer a cooker with sand or salt. Place a cooker stand inside. Set it for preheating.
Pour into a greased baking pan. Make sure you fill half of the pan. So take the size of the baking pan accordingly. If you take a smaller baking dish and fill it more than half, the cake will break on top as in my case.
Bake for 40-50 minutes at 180 degrees C.
In cooker, place the baking tin over the stand and bake on a medium flame for 30-50 minutes.
Check the ragi cake after 30 minutes. Bake longer accordingly in cooker.
Once the eggless ragi cake is baked, allow it to cool down completely.
Slice and bake the thin slices again to make homemade rusks with millets.
Bake each side for 20 minutes at 160 degrees celsius.
Let the gluten-free rusks cool down before dunking the Indian toast in a cup of warm milk or hot tea.
