Chapter 10: Why Long Fermentation Is Worth The Wait

  "Sometimes the most important ingredient in bread is time." One of the questions I receive most often is, "Why does homemade yeast powder take so long to proof?" I understand the concern. We live in a world where everything is expected to happen quickly. Fast recipes. Instant mixes. One-hour breads. So when people hear that dough made with homemade yeast powder may take 7 to 12 hours , or sometimes longer, they immediately worry that something has gone wrong. But over the years, I have learnt to see long fermentation very differently. I don't see it as waiting. I see it as allowing nature enough time to work. While the dough rests, it is not doing nothing. It is quietly changing. What Happens Inside The Dough? At first, the dough may look silent. But inside, millions of tiny yeast cells and beneficial bacteria are working. They begin feeding on the natural sugars released from the flour. As they feed, they produce carbon dioxide.
