Instant Dum Tea: Quick Masala Chai


Call it masala chai or dum tea, instant tea gives you the most flavorful beverage you have ever had. If you are a tea lover like me, you can never say no to quick tea. Make tea with one pot one shot and you will be hooked for a lifetime.This happened with me one fine day and will happen with you too if you give it a try.  Now I do not want to go back to the old way of making tea, seriously! I am not kidding.

What is so Special about dum Tea?

Well, pressure cooking helps retain all the flavors in the tea - use whatever spices you may want to add to your tea and pack a punch with the most flavorful tea. The tea reminds me time and again of the tea I had at Shirdi Sai temple. The aroma of cardamom in the tea made it more flavorful.

Let's get started with our tea, also known as dum tea or masala chai.

To make masala chaska at home:

Sift tea powder using a sieve. This will remove the powdered tea, which can be used as a natural fertilizer for plants.
Add 1 tbsp dried basil leaves. I have shared a video on how to dry basil/tulsi leaves at home.
Add 1 tsp- ginger powder. Check how to make edible powders at home here.
Add 1/2 sp- clove/laung powder.
Add 1/2 tsp roasted ajwain/carom seeds.
Add 1/2 tsp- black pepper
Add 1 tsp- cinnamon powde (dalchini)
Mix everything and pack in an airtight container.
When you need to make masala chai or chaska at home, boil 1 cup of water for 1 cup of tea.
Add 1/2 cup or more of milk, depending on your taste buds. I like it less rich.
Stir in 1 tsp or more of this tea masala. You can add more if you want a strong cup of tea.
I like it light.
Boil and let the masala chai simmer covered for a couple of minutes on a low flame.
Sieve and enjoy flavorful cuppa!!






Ingredients for 1 cup
1/2 cup- water (you may vary the water: milk ratio---choice is yours..if you like it milkier, increase the milk amount and if you like it watery and light, reduce the milk to water ratio)
1/2 cup- milk
1 tsp- tea powder(I use Waghbakri)
Cardamom powder
Ginger- fresh or powdered
You may choose spices of your choice.
I make it sugarfree. So I do not add any sweetener in my tea.

How to make instant tea

Make sure your cooker is standardized for such instant recipes.
Put all ingredients in the cooker and pressure cook for 2 whistles. Even 1 whistle is good to go. But I wait for 2 whistles to let all the flavors immerse in my tea.
Ever since I learned to make dum tea, I have scaled the recipe up for 3-4 persons. Make sure you do not scale the recipe for more than 3 cups in a 3-liter pressure cooker. Else, there would be a lot of spewing.
Trust my words for it - you will get the most flavorful tea with one pot. If you have a couple of guests at home, let the pressure cooker give you the world's best tea.
