Can I Make Yeast/Sourdough Starter With Whole Wheat?

Like millions of people around the world, I found myself spending more time in my kitchen during the COVID-19 lockdown.

Bread had always fascinated me.

Not just because I enjoyed eating it, but because I couldn't understand how something as simple as flour and water could transform into a soft, airy loaf without relying entirely on commercial yeast.

That curiosity led me to sourdough.

At first, it felt almost magical.

People were mixing only flour and water, leaving the mixture on the kitchen counter, and somehow a living culture appeared.

I wanted to understand how that was possible.

So I started reading.

Watching.

Learning.

Most importantly...

experimenting.

One experiment became another.

Every loaf taught me something new.

Some were successful.

Others were complete failures.

I accidentally killed my first starter.

I baked loaves that barely rose.

Some breads became so sour that my family refused to eat them.

Every mistake became a lesson.

Slowly, I stopped blindly following recipes.

Instead, I began observing what the starter was trying to tell me.

That simple change transformed everything.

Today, when people ask me what sourdough taught me, my answer isn't simply "how to bake bread."

It taught me patience.

Observation.

Curiosity.

And above all...

that nature rarely works according to a clock.


What Exactly Is a Sourdough Starter?

Before we make one together, let's understand what it actually is.

A sourdough starter is a living culture made from just two simple ingredients:

  • Whole wheat flour

  • Water

That's all.

There is no commercial yeast.

No baking powder.

No baking soda.

No secret ingredient.

Whole wheat flour naturally carries tiny wild yeasts and beneficial bacteria on its surface.

They are already there.

You simply cannot see them.

When flour and water are mixed together, these microorganisms wake up and begin multiplying.

At first, very little appears to happen.

But inside the jar, millions of microscopic organisms are beginning a remarkable partnership.

The yeast feed on sugars released from the flour and produce carbon dioxide.

Those tiny bubbles are what eventually help bread rise.

The beneficial bacteria produce organic acids that help create a stable environment and contribute to flavour.

Together, they create a balanced ecosystem that can be maintained for years with regular feeding.

My own whole wheat sourdough starter has been alive for several years now.

Every loaf I bake reminds me that something which began with two spoonfuls of flour and water has quietly become a permanent member of my kitchen.

Think of a sourdough starter as a tiny city.

The yeast are the bakers.

They produce the gas that makes bread rise.

The beneficial bacteria are the caretakers.

They help create the right environment so that unwanted microorganisms struggle to grow.

Neither works alone.

Together, they build a healthy community that keeps your starter alive.


Why I Chose Whole Wheat Instead of Maida

Many bakers recommend refined flour, all-purpose flour or maida when beginners start a sourdough starter.

I understand why.

Refined flour usually ferments more slowly than whole wheat flour because it has less bran, germ and natural nutrition for the microorganisms.

That slower activity can make the starter easier to monitor and manage for beginners.

Whole wheat behaves differently.

Because it contains more nutrients, the yeast and bacteria often become active quickly.

That can feel exciting, but it also means the starter may rise and fall faster.

If you miss that fall, the starter can become hungry and develop sourness.

That is why many people find maida easier in the beginning.

But I do not use maida in my kitchen.

So I decided to begin with whole wheat flour.

It was more active.

It needed closer observation.

It needed timely feeding.

But it worked beautifully for me.

That experience taught me one of my first sourdough lessons:

Whole wheat is not impossible for beginners.

It simply asks you to observe more carefully.


Before You Begin

One of the biggest mistakes beginners make is rushing straight into mixing flour and water.

Before you start, prepare everything you'll need.

Fortunately, the equipment list is wonderfully short.

You will need:

  • A clean glass jar

  • Whole wheat flour

  • Drinking water

  • A spoon or spatula

  • A rubber band or marker to track the rise

  • A loose lid or clean cloth

That's it.

You don't need expensive equipment.

You don't need special containers.

You certainly don't need fancy sourdough tools.

Some of my best starters have grown in ordinary glass jars from my own kitchen.


A Few Small Tips Before We Start

Always begin with a clean jar.

Avoid using water that is very hot, as excessive heat can harm the microorganisms you're trying to encourage.

Cover the jar loosely rather than sealing it airtight.

Your starter doesn't need fresh air to "feed," but a loose cover allows gases produced during fermentation to escape while keeping dust and insects out.

Finally...

Choose a place in your kitchen where the temperature remains fairly stable.

Don't worry if it isn't perfect.

Sourdough has survived for thousands of years without temperature-controlled proofing boxes.

It simply asks for a little patience.

If I could go back and give one piece of advice to the person who mixed that very first jar of flour and water during the lockdown, it would be this:

Stop watching the clock.

Start watching the starter.

That one lesson changed everything.


Excellent. From here onwards, I'm writing this as a book, not a blog. The reader has just finished the introduction and is now about to make their very first starter.


Day 1 – Let's Make Your First Whole Wheat Sourdough Starter

Every sourdough starter begins with something wonderfully simple.

Just flour.

And water.

When I mixed my very first starter during the COVID-19 lockdown, I had no idea that this little jar would still be alive years later.

Nor did I imagine that it would eventually lead me to rediscover my nani's khamir, create homemade yeast powder and write this handbook.

At that moment, it was simply an experiment.

Now it's your turn.


What You'll Need

  • 3 tablespoons whole wheat flour

  • 3 tablespoons drinking water (room temperature)

  • A clean glass jar

  • A spoon or spatula

  • A loose-fitting lid or clean cloth


Let's Begin

Add the whole wheat flour and water to your glass jar.

Mix thoroughly until no dry flour remains.

The mixture should resemble a thick pancake batter.

Not too runny.

Not too stiff.

If it looks slightly thicker or thinner than mine, don't panic.

Different brands of flour absorb water differently.

The exact consistency is less important than making sure every bit of flour is fully hydrated.

Once mixed, scrape down the sides of the jar.

Place a rubber band around the outside of the jar to mark the level of your mixture.

This simple little trick becomes surprisingly useful over the coming days because it allows you to see exactly how much your starter rises.

Cover the jar with a loose lid or clean cloth.

Leave it at room temperature for 24 hours.

And then...

Walk away.

I know you'll be tempted to keep checking it every hour.

I certainly did.

But fermentation has no interest in impressing us quickly.

Nature works quietly.


What You Might See

For most people...

Absolutely nothing.

No bubbles.

No rise.

No dramatic change.

Just wet flour sitting in a jar.

That is perfectly normal.

Don't compare your starter with photographs on the internet.

Some starters show tiny bubbles within the first day.

Others remain completely silent.

Both are healthy beginnings.


What I Saw

My own starter looked almost exactly like it did when I first mixed it.

I remember wondering,

"Have I already done something wrong?"

The answer was no.

The microorganisms were already waking up.

There simply weren't enough of them yet for me to notice.

That became one of my earliest lessons in fermentation.

Just because nothing is visible doesn't mean nothing is happening.

Whole wheat flour naturally carries tiny populations of wild yeast and beneficial bacteria.

The moment water is added, these microorganisms begin absorbing moisture and waking from their dormant state.

At first, their numbers are extremely small.

They need time to multiply before they produce enough carbon dioxide for us to see bubbles.

Think of the first day as planting a seed.

You don't expect a tree by tomorrow morning.


Don't Worry If...

  • Your starter looks exactly the same after 24 hours.

  • You don't see bubbles.

  • The surface looks slightly dry.

  • Nothing appears to be happening.

All of these are completely normal on Day 1.

The most common mistake beginners make is becoming impatient and starting again.

Please don't.

Your starter has only just begun its journey.


Beginner Tip

Choose a jar that is at least three times taller than the mixture you begin with.

A healthy starter can easily double or even triple in height over the coming days.

Giving it plenty of space now prevents messy overflows later.

Nature rarely announces itself with fireworks.

Most of its best work begins quietly.

Today your jar may look ordinary.

Tomorrow it will begin telling you its story.

We'll feed the starter for the first time and look for the earliest signs that life has begun inside the jar.

Sometimes you'll see bubbles.

Sometimes you won't.

Both are part of the journey.


Day 2 – The First Signs of Life

After 24 hours, it's time to check your starter.

Open the jar.

Look closely.

Smell it.

Observe it.

This is the beginning of one of the most important habits you'll develop as a sourdough baker.

Learning to observe rather than simply following instructions.

Every starter is unique.

Every kitchen is different.

And every season has its own personality.

That means your starter may not look exactly like mine.

And that's perfectly alright.


What You Might See

By the second day, you may notice tiny bubbles on the surface or around the sides of the jar.

Some starters produce only a few bubbles.

Others become surprisingly active.

And some...

still look almost unchanged.

All three situations can be completely normal.

If you don't see bubbles yet, don't assume your starter has failed.

Whole wheat flour behaves differently depending on the flour itself, the temperature, humidity and even the microorganisms naturally present in your kitchen.

Nature doesn't follow identical schedules.


What You'll Probably Smell

Today's aroma may surprise you.

Your starter might smell slightly sweet.

It may smell like wet wheat.

Some starters begin developing a faint yoghurt-like aroma.

Others smell slightly fruity.

Don't try to identify the "perfect" smell.

Instead, simply notice how it changes from one day to the next.

Keeping a small notebook beside your starter can be surprisingly helpful.

I still enjoy writing down little observations during new experiments.


What To Do Today

Unlike Day 1, today we'll begin the feeding process.

First, stir the starter well.

Now transfer 1 teaspoon of the starter into a clean glass jar.

This tiny amount contains all the microorganisms you need.

The rest becomes discard.

At this early stage, I recommend throwing the discard away.

It has not yet matured enough for cooking or baking.

Now add:

  • 3 tablespoons whole wheat flour

  • 3 tablespoons drinking water

Mix until no dry flour remains.

Scrape down the sides of the jar.

Place the rubber band at the new level.

Cover loosely.

Leave it at room temperature for another 24 hours.


Why Do We Discard?

This is probably the first question almost every beginner asks.

"Why throw most of it away? Isn't that wasting flour?"

I completely understand.

I asked the same question when I started.

Discarding isn't about throwing away the good microorganisms.

It's about giving them enough fresh food.

Imagine inviting ten people to dinner and serving only one small chapati.

Everyone goes hungry.

Now imagine serving the same ten people a full meal.

That's essentially what feeding does.

If we simply kept adding more flour every day without removing any starter, the jar would become enormous very quickly.

More importantly, the microorganisms would become overcrowded.

By keeping only a small amount and feeding it fresh flour and water, we give the yeast and beneficial bacteria plenty of food and room to multiply.

Think of discard as pruning a healthy plant.

You're not weakening it.

You're encouraging stronger growth.


Science Made Simple

During these first few days, many different microorganisms compete for space inside the jar.

Some disappear quickly.

Others become dominant.

Every feeding gently encourages the microorganisms that thrive in this environment while gradually reducing those that don't.

This natural selection is one of the reasons a mature sourdough starter becomes remarkably stable over time.


What I Saw

The second day was when I became truly excited.

Tiny bubbles had appeared.

Not many.

But enough to tell me something was happening.

I remember calling my family to show them.

Looking back now, they probably wondered why I was so excited about a jar of wet flour.

Today...

I completely understand my own excitement.

Those little bubbles were proof that nature had begun working.


Don't Worry If...

  • Your starter hasn't risen.

  • You only see one or two bubbles.

  • The smell seems different from yesterday.

  • It still looks rather quiet.

None of these means your starter has failed.

The only thing your starter asks for today is another feeding...

and your patience.


Beginner Tip

Always use a clean jar when feeding your starter.

Old starter drying around the sides of the jar can make it difficult to judge future rise and may encourage mould if left for too long.

A clean jar makes observation much easier.

One lesson stayed with me from the second day.

Small changes matter.

Those first tiny bubbles didn't look impressive.

But they were the beginning of everything that followed.

Fermentation often teaches us that progress arrives quietly before it becomes obvious.

Tomorrow, we'll meet one of the most misunderstood stages of sourdough.

The stage that convinces countless beginners their starter has failed...

when, in reality, it's doing exactly what it should.



Day 3 – Don't Panic. Your Starter Hasn't Failed.

By the third day, many beginners become worried.

Yesterday there were bubbles.

Today...

The starter looks quieter.

Perhaps it has barely risen.

Maybe the bubbles have reduced.

Some people even think the starter is dying.

It isn't.

In fact, this is one of the most normal stages of building a sourdough starter.

I cannot count the number of messages I have received over the years that begin with,

"My starter was active yesterday. Today nothing is happening. Should I throw it away and start again?"

Almost every time, my answer is the same.

No.

Keep going.


What You Might See

Every starter is different, but on Day 3 you may notice one or more of these changes:

  • A few bubbles scattered throughout the starter.

  • Little or no rise.

  • A thinner consistency than yesterday.

  • A stronger smell.

  • A layer of liquid beginning to appear on top.

Sometimes the starter may even appear less active than it did on Day 2.

That often worries beginners.

It shouldn't.


What You'll Probably Smell

Today's aroma may become noticeably stronger.

Some people describe it as slightly sour.

Others compare it to yoghurt, buttermilk or even idli batter.

Some starters may smell fruity.

Others develop an aroma that isn't particularly pleasant.

Don't judge your starter by today's smell alone.

During these early days, the microbial community is still changing.

The aroma changes with it.


What To Do Today

Today's feeding is exactly the same as yesterday.

Stir the starter well.

Transfer 1 teaspoon of the starter into a clean jar.

Discard the rest.

Now add:

  • 3 tablespoons whole wheat flour

  • 3 tablespoons drinking water

Mix thoroughly until smooth.

Mark the level with your rubber band.

Cover loosely.

Leave it at room temperature for another 24 hours.

Simple.

Consistent feeding is far more important than trying to "fix" the starter.


Why Does My Starter Suddenly Look Less Active?

This surprises many beginners.

One day the starter looks lively.

The next day it seems almost asleep.

What happened?

Nothing unusual.

During the first few days, different groups of microorganisms become active one after another.

Some grow rapidly and then decline.

Others take over as the environment inside the starter gradually becomes more acidic.

The bubbles you saw on Day 2 weren't necessarily produced by the same stable community that will eventually raise your bread.

Day 3 is often a transition.

Nature is quietly selecting the microorganisms best suited to live together.


Science Made Simple

Scientists sometimes describe the first few days of a sourdough starter as a process of microbial succession.

That simply means different microorganisms appear at different times.

At first, many types of bacteria and yeasts begin growing.

As the starter becomes more acidic, only those best adapted to this environment continue to thrive.

Eventually, a stable partnership develops between wild yeasts and beneficial lactic acid bacteria.

That stable community is what we call a mature sourdough starter.

So if your starter seems quieter today...

it may actually be becoming healthier.


What About That Liquid on Top?

Sometimes you may notice a thin layer of liquid forming.

Many people immediately assume something has gone wrong.

Usually, it hasn't.

This liquid is often called hooch.

It simply tells you that the microorganisms have consumed much of their available food and the starter is becoming hungry.

If you see hooch, stir it back in or pour it off.

Either approach works.

Then continue with your regular feeding.

The important thing is not the hooch itself.

It is understanding what it is trying to tell you.

Your starter is asking for fresh food.


What I Saw

Day 3 was the day I nearly gave up.

The excitement of the first bubbles had disappeared.

The starter looked slower.

It smelled stronger.

I thought I had ruined everything.

Thankfully...

I didn't throw it away.

I simply fed it again.

Looking back now, I smile every time a beginner sends me exactly the same message.

Because I know what usually happens next.


Don't Worry If...

  • The bubbles have reduced.

  • The starter hasn't risen today.

  • The smell has become stronger.

  • A little liquid appears on top.

  • The mixture looks thinner than yesterday.

All of these can be completely normal.

Keep feeding.

Keep observing.

Trust the process.


Beginner Tip

Resist the temptation to feed your starter more often just because it seems quiet.

More feeding does not automatically make a starter stronger.

Consistency usually works better than impatience.

Day 4 – Every Starter Has Its Own Journey

By now, many beginners start comparing their starter with photographs on social media.

Please don't.

This is probably one of the biggest mistakes we make when learning sourdough.

One person shows a starter that has tripled in volume.

Another shows huge bubbles.

Someone else's starter is already baking bread.

Then we look at our own jar and wonder,

"What am I doing wrong?"

The truth is...

Probably nothing.

Over the years, one thing has become very clear to me.

Every starter behaves differently.

Not only because every kitchen is different.

But because every flour is different.

The weather is different.

The microorganisms naturally living inside every home are different.

India itself has so many different climatic conditions that two people following exactly the same method can still get slightly different results.

Someone living in humid coastal Kerala may not see exactly the same activity as someone living in dry Rajasthan or cool Himachal Pradesh.

That doesn't mean one starter is better than another.

It simply means nature is adapting to the environment around it.

This is why I always encourage people to stop comparing their starter with mine or anyone else's.

Instead...

learn to understand your own starter.

It will become your best teacher.


Continue Feeding

Today's routine remains exactly the same.

Stir the starter well.

Transfer 1 teaspoon to a clean glass jar.

Discard the rest.

Now feed it with:

  • 3 tablespoons whole wheat flour
  • 3 tablespoons water

Mix until no dry flour remains.

Cover it loosely.

Leave it undisturbed.

Now observe.

Don't keep opening the jar every hour.

Don't keep wondering whether something magical has happened.

Nature doesn't enjoy being rushed.


What I Experienced

Around this stage, I stopped looking only for height.

Instead, I started noticing small details.

Was the smell becoming more pleasant?

Were there a few more bubbles than yesterday?

Did the starter feel lighter when I stirred it?

Was it beginning to trap a little more air?

Those tiny changes were much more important than whether it had doubled.

In fact, those small observations taught me far more about sourdough than any recipe ever did.


One Lesson That Changed My Baking Forever

When I first started, I kept asking,

"How many hours should it take?"

Today...

I ask a completely different question.

"What is my starter telling me today?"

That simple change transformed the way I bake.

The clock became less important.

The starter became more important.

Every feeding gradually encourages the microorganisms that are best suited to your own kitchen.

That is why a mature sourdough starter slowly develops its own unique personality.

It isn't copying another starter.

It is adapting to your home.

You're growing a starter in your own kitchen.

And that's exactly where it should learn to thrive.

By the fifth day, many beginners expect their starter to look like the beautiful jars they see on social media.

If yours doesn't...

please don't feel disappointed.

One thing I have learnt over the years is that sourdough rarely follows our expectations.

It follows nature.

And nature doesn't work according to a fixed timetable.

Some whole wheat starters become very active by now.

Others need another few days.

Both can be perfectly healthy.

The important thing isn't how quickly your starter rises.

The important thing is whether it is becoming stronger with every feeding.

That is what we are trying to achieve.

Not speed.

Strength.


What You Might Notice

Around this stage, I often noticed that my starter began looking healthier.

The bubbles became more evenly distributed.

The texture felt lighter when I stirred it.

The aroma also changed.

Instead of smelling like simply wet flour, it gradually developed the pleasant fermented smell I had been waiting for.

That change always gave me confidence that the microorganisms were settling into a healthy balance.

Your starter may show these changes a little earlier or a little later.

Both are completely normal.


Continue With The Same Routine

Today's feeding remains exactly the same.

By now you may be wondering,

"Should I increase the quantity?"

"Should I feed it more often?"

"Should I change something?"

My answer is simple.

Not yet.

Continue with the same routine.

Transfer 1 teaspoon of the starter into a clean jar.

Discard the rest.

Feed it with:

  • 3 tablespoons whole wheat flour
  • 3 tablespoons water

Mix well.

Cover loosely.

Leave it at room temperature.

Sometimes the hardest part of sourdough isn't knowing what to do.

It's resisting the urge to keep changing things.

Consistency gives your starter the best opportunity to develop naturally.


One Lesson I Learnt Quite Early

When I first started making sourdough, I believed I had to keep fixing things.

If the starter looked slow, I wanted to change the feeding schedule.

If somebody else's starter looked more active, I wondered if I should change the flour.

Eventually I realised something.

The problem wasn't my starter.

It was my impatience.

Once I stopped interfering and simply continued feeding it consistently, the starter gradually rewarded me with steady, reliable activity.

That lesson stayed with me.

Even today, whenever I begin a new fermentation project, I remind myself not to rush nature.

As they continue multiplying, the starter gradually becomes more stable.

Think of it as building a community.

The longer healthy microorganisms receive the right conditions, the stronger that community becomes.

Don't Compare Your Day Five With Someone Else's

This is something I really want every beginner to remember.

Many sourdough books are written in countries where the climate is very different from ours.

Even within India, weather conditions vary enormously.

The temperature in Rajasthan is not the same as in Kerala.

The humidity in Mumbai is very different from the weather in Delhi.

A kitchen in Shimla behaves differently from one in Chennai.

All these factors influence fermentation.

That is why I never expect every reader to see exactly the same activity on exactly the same day.

Instead, I encourage you to look for progress.

Is your starter becoming more active than it was a few days ago?

Does it smell healthier?

Are the bubbles increasing?

If the answer is yes...

you are moving in the right direction.

Day 6–10 – Watching Your Starter Grow Up

By now, your starter has been with you for almost a week.

It may not feel like much has happened.

But if you compare it with the mixture you made on Day 1, you'll realise just how much has changed.

What began as nothing more than flour and water has slowly transformed into a living culture.

The bubbles are becoming more consistent.

The aroma is becoming more pleasant.

The texture feels lighter.

The starter is slowly learning how to become a reliable leavening agent.

Some starters reach this stage in six or seven days.

Others may take eight, nine or even ten days.

Please don't worry if yours takes a little longer.

Over the years, I have learnt that fermentation doesn't read calendars.

It responds to conditions.


Continue Feeding

At this stage, continue following exactly the same routine that has brought you this far.

Transfer 1 teaspoon of the starter into a clean jar.

Discard the rest.

Feed it with:

  • 3 tablespoons whole wheat flour

  • 3 tablespoons water

Mix thoroughly.

Mark the level with your rubber band.

Cover loosely.

Leave it at room temperature.

By now, this routine probably feels familiar.

That's a good thing.

Healthy starters are built through consistency, not constant experimentation.


How Do You Know Your Starter Is Ready?

This is one of the questions I receive most often.

Unfortunately, there isn't a single answer.

Many people say,

"Your starter is ready on Day 7."

I don't agree.

My experience has taught me that your starter is ready when it behaves like a mature starter, not simply because a certain number of days have passed.

So instead of counting days, start looking for signs.

A healthy starter should:

  • Rise well after feeding.

  • Fill with bubbles throughout, not just on the surface.

  • Feel light and airy when stirred.

  • Have a pleasant fermented aroma.

  • Rise consistently after every feeding.

When you begin seeing these signs regularly, your starter is telling you that it is becoming ready for baking.


Don't Chase The Calendar

One of the biggest mistakes beginners make is expecting their starter to follow someone else's timeline.

If an article says the starter should be ready in seven days and yours isn't, you immediately think you've failed.

Please don't think that way.

Every kitchen is different.

Every flour is different.

Every season is different.

How I Maintain My Starter


One of the questions I receive most often is,


"Do I have to feed my starter every day for the rest of my life?"


The answer is...


Not necessarily.


It depends on how often you bake.


When I was baking regularly, I kept my starter at room temperature and fed it more frequently.


But like most families, there were weeks when I wasn't baking every day.


Keeping the starter on the kitchen counter and feeding it daily simply didn't make sense.


That's when my refrigerator became my best friend.


Once my starter had matured and become strong, I stored it in the refrigerator.


The cold temperature slows fermentation dramatically.


The yeast and beneficial bacteria don't stop working completely.


They simply become much less active.

It's about maintaining a healthy balance.

Every time we feed our starter, we're giving the microorganisms fresh food.

If we simply kept adding more flour and water without removing any starter, the quantity would become enormous within a few days.

More importantly, the microorganisms would eventually run out of fresh food.

By removing a small portion and feeding what remains, we keep the starter healthy, active and easy to maintain.

Think of it as refreshing the culture rather than throwing it away.

Once I understood that, discard made much more sense to me.


When Does The Discard Become Useful?

During the first few days of building a starter, I always recommend throwing the discard away.

At that stage, the microbial community is still developing.

The starter hasn't become stable yet.

Once your starter is mature, active and healthy, the discard becomes much more useful.

From then on, you don't have to think of it as waste.

You can think of it as another ingredient waiting to be used.

That is why I prefer to discard it during this stage.

Once the starter has matured and consistently shows healthy activity, the discard can become useful in many recipes.

Day 5 – The Day My Starter Began To Look Better

By Day 5, I could finally see a change that made me feel more confident.

My starter looked better than it had on Day 4.

It smelled better too.

The smell was beginning to remind me of bread dough while it was proofing.

When I stirred the starter, it became noticeably more bubbly.

It had also risen slightly and fallen.

I had allowed it to sit like that before going to bed.

That rise and fall taught me something important.

Until now, I had been following a feeding cycle of around 10 to 12 hours.

But from this stage onwards, I knew I had to start watching my starter more closely.

The feeding time might need to change.

Not because a book told me to change it.

Not because a fixed number of days had passed.

Because my starter's behaviour was changing.

Start Watching The Rise And Fall

This is where observation becomes extremely important.

Look at how much your starter rises.

Does it double?

Does it triple?

How long does it take to reach its highest point?

And most importantly...

When does it begin to fall?

I learnt to watch these changes carefully.

If your starter behaves like mine did, don't simply wait for it to collapse completely before feeding it.

Once you notice that it has started to fall, it is telling you that the food available to the microorganisms is being used up.

That is when I prefer to feed it.

I don't want my starter sitting hungry for too long.

In my experience, allowing it to remain hungry can encourage sourness.

And sour bread was never my goal.

What I Did On Day 5

I stirred my starter well.

Then I discarded part of it.

I used 2 tablespoons of starter and fed it with:

  • 3 tablespoons whole wheat flour
  • 3 tablespoons water

I mixed everything well and continued observing.

At this stage, my starter was:

  • Slightly more bubbly
  • More bubbly after stirring
  • Pleasant smelling
  • Beginning to smell like proofing bread dough
  • Rising slightly
  • Beginning to show a rise-and-fall pattern

These were encouraging signs.

My starter was not ready because a calendar said "Day 5."

It was getting closer because its behaviour was changing.

Can I Start Saving The Discard Now?

This was also the stage when I began considering the discard useful.

My rule was simple.

It had to smell good.

During the earlier days, I did not use the discard.

I threw it into my compost bin.

But once my starter began smelling pleasant and behaving well, I started saving the discard for recipes.

You can collect the usable discard in one bowl if you wish.

However, I prefer using it quickly.

The discard will continue fermenting even in the refrigerator.

Without feeding, it can gradually become sour.

So rather than collecting large amounts for days and days, I prefer using it the same day or the next day whenever possible.

Again...

this comes from the way I use sourdough in my own kitchen.

Why I Discard

People have asked me this question hundreds of times.

"Why do you discard half?"

For me, one of the main reasons has always been sourness.

Imagine keeping a very large amount of starter and giving it only a small amount of fresh flour and water.

There are many yeast cells and microorganisms waiting for food.

The fresh feed gets consumed quickly.

The starter becomes hungry sooner.

When my starter remains hungry for too long, I notice more sourness.

That is exactly what I try to avoid.

By keeping a smaller quantity of starter and giving it enough fresh flour and water, I give the microorganisms more food to work with.

In my kitchen, this has helped me maintain a fresher starter with little to mild sourness.

You can certainly make a starter without discard.

But then you may need to keep increasing the amount of feed to match the growing volume of starter.

For me, discarding made the process much easier to manage.

The ratio between the existing starter and the fresh food matters.

A larger microbial population can use available nutrients more quickly.

As those nutrients become limited, the fermentation environment continues changing and acids can accumulate.

The clock was still useful.

But observation had become more important.


Day 6 And Beyond – Your Starter May Change The Schedule

By Day 6, some people following my starter series were already seeing stronger activity.

One member of my community told me that 11 hours after feeding, her starter had risen but had not yet fallen.

She wanted to know whether that was alright.

My answer was yes.

If the starter has not begun falling, you can continue with the 12-hour feed and discard cycle.

Then observe it again after the next feed.

It may double.

It may triple.

Or it may not triple at all.

The important thing is to learn the pattern of your starter.

This is where I stopped giving everyone one rigid feeding time.

If your starter is doubling or tripling quickly, watch it more closely.

Observe how long it takes to rise.

Then watch when it begins to fall.

Feed accordingly.

My goal was to feed the starter before it dropped all the way back to the level at which I had originally fed it.

Why?

Because I did not want it sitting hungry.

And I did not want unnecessary sourness.

When Is My Starter Close To Being Ready?

In my experience, a whole wheat starter is getting close when it:

  • Smells good
  • Becomes bubbly
  • Rises after feeding
  • Doubles or even triples
  • Recovers after the quiet or dormant stage
  • Begins showing a more predictable rise-and-fall pattern

The most important sign for me was consistency.

I wanted to see the starter rise within roughly the same amount of time after feeding.

One exciting rise was not enough.

I wanted to see that behaviour again.

And again.

That told me the starter was becoming reliable.

Depending on the starter and the weather, this process may take anywhere from 6 to 10 days.

My own first starter took 10 days.

That is why I never tell people:

"Your starter will be ready on Day 7."

I cannot know that.

Your starter and your weather will decide.

What I can tell you is what I learnt through my own starter and through the people who followed this series with me:

Keep observing.

Observation is the key to making the right sourdough starter.

Indian Weather Changes Everything

One of the most important things I learnt during my live sourdough series was that I could not give everyone in India exactly the same timing.

India does not have one climate.

Someone making a starter during winter in Dehradun may have a very different experience from someone making the same starter during summer in Delhi.

A kitchen in Odisha may behave differently from one in Rajasthan.

The flour may be the same.

The quantity of water may be the same.

The feeding method may be the same.

But the starter can still behave differently.

I made my starter when the weather was cooler.

Mine took around 10 days.

When people began following the same process during hotter weather, I realised that some starters could become ready much earlier.

Sometimes within six days.

That is why I kept repeating one thing throughout my starter series:

Observation is the key.

What I Do In Hot Weather

Whole-grain flours can ferment quickly.

The natural yeast cells have access to the proteins and starches in the whole grain and can become active rapidly.

In hot weather, I prefer frequent feeds.

During my starter-making journey, I followed a feeding cycle of around 10 to 12 hours.

If the starter began rising and falling faster, I watched its cycle and fed it accordingly.

I did not want to leave it hungry for a long time.

My focus was always on keeping sourness under control.

If I saw the starter beginning to fall, I knew it was time to start thinking about the next feed.

I tried to feed it before it dropped all the way back to the level at which I had originally fed it.

That was my method.

And it worked for me.

What About Cold Weather?

When I began my own starter, the weather was still cool.

I kept the jar at room temperature in my kitchen.

If it is chilly where you live, you may keep the starter in the oven with the oven switched off.

Do not shut or lock it away tightly.

Keep the jar loosely covered.

The idea is simply to give the starter a slightly more protected place.

Even in cool weather, I made my starter at room temperature.

It took longer.

But it worked.

This is why I do not panic when fermentation slows in winter.

Slower does not automatically mean failed.

It may simply mean the starter needs more time.

Should I Change To A 24-Hour Feeding Cycle In Winter?

One of my followers from Dehradun asked me whether she should follow a 24-hour cycle because winter was approaching.

She had also started with a much larger batch—100 g water and 100 g whole wheat flour.

My concern with starting big was simple.

Waste.

By the time the starter became ready, she could have accumulated a large quantity of discard.

If you plan to bake every day, a bigger starter may make sense.

Otherwise, I always prefer starting small.

My advice with a whole-grain starter was also to continue feeding it frequently.

For me, the 12-hour cycle helped keep sourness under control.

Whole-grain starter can become hungry quickly.

And in my experience, a hungry starter can become sour.

So even when the weather changes, I do not blindly decide the feeding schedule only by looking at the season.

I look at the starter.

How quickly is it rising?

When does it begin falling?

How does it smell?

Those answers tell me far more.

How I Know My Starter Is Ready

I don't declare a starter ready simply because it has reached Day 7.

My first starter took 10 days.

I notice whether it doubles or triples.

Most importantly, I look for consistency.

If the starter rises well once and then becomes completely unpredictable, I give it more time.

I want it to rise in a fairly consistent period after feeding.

That is when I begin trusting it for bread.

A starter that is bubbly, smells good and reliably rises after feeding is telling me much more than the date on a calendar ever could.

Do I Use The Float Test?

For me, observation has always been more important.

I know my starter.

I know how it behaves after feeding.

I know what it looks like when active.

I know the smell.

I know the rise.

That is what I trust.

My starter does not need to pass an internet test to prove itself to me.

It needs to raise my dough.

That is the real test.

My 3:3:1 Or 3:3:2 Feeding Method

This ratio created some confusion during my live starter series, so let me explain it very simply.

I use:

3 tablespoons whole wheat flour

3 tablespoons water

and either:

1 tablespoon starter

or

2 tablespoons starter

So the ratio I often describe as 3:3:1 or 3:3:2 means:

Flour : Water : Starter.

Both worked for me.

If you have a larger amount of starter, you do not need to keep feeding the entire quantity.

Take 1 or 2 tablespoons.

Feed that.

The remaining mature starter can become discard for your recipes.

This keeps the starter quantity manageable.

It also gives the smaller amount of starter enough fresh food.

Again, my focus has always been the same.

I want a healthy starter.

And I want to keep unnecessary sourness away.

Moving My Starter To The Refrigerator

Initially, I followed a three-day feeding cycle for my refrigerated starter.

This helped me keep it fresh and, in my experience, without strong sourness.

If I was not baking, I simply maintained it.

Discard.

Feed.

Return it to the refrigerator.

That was enough.

As my starter matured and became stronger, I gradually learnt that it could handle longer gaps.

But the three-day cycle was the routine that gave me confidence in the beginning.

One of my followers once messaged me in panic.

She had placed her starter in the refrigerator around Day 9 and then left it untouched.

After watching another video, she realised she had missed the follow-up feeding routine.

She thought all her hard work had been wasted.

My answer was simple.

No.

The starter was not automatically wasted.

I told her to remove it from the refrigerator.

Let it come to room temperature.

Discard.

Feed.

Then return it to the refrigerator.

That experience reminded me how frightened beginners can become about "killing" a starter.

A healthy starter can be far more resilient than we imagine.

How I Refresh My Starter Before Baking

When I want to bake, I remove my starter from the refrigerator.

I allow it to come to room temperature.

People who followed my series used Aashirvaad.

Others used fresh chakki or mill atta.

There is no hard and fast rule.
