When I first began learning about natural fermentation, I never imagined that one simple jar of flour and water would change so much.

It began during the COVID-19 lockdown with a simple curiosity about sourdough.

Then it became an obsession with understanding fermentation.

One experiment led to another.

That journey eventually brought me back to my childhood.

Back to my nani's traditional khamir.

Back to conversations with my mother.

Back to old kitchen wisdom that had quietly been waiting to be remembered.

From there came homemade yeast powder.

Then fruit water.

Then gluten-free starters.

And somehow...

Here we are.

Looking back, I realise this handbook is not really about yeast.

It is about curiosity.

It is about asking questions.

It is about refusing to give up when something doesn't work the first time.

Some of my best lessons came from failures.

My very first sourdough starter was accidentally thrown away.

Some loaves were too sour.

Some experiments didn't behave the way I expected.

But every single one taught me something.

If there is one message I hope stays with you long after you close this book, it is this:

These are some of the questions that have been asked every now and then. So in this video from the Odia cuisine, I present to you Odisha special Pakhala - the ancient Odia tradition of fermenting rice. Now coming back to making Pakhala at home. I dedicate this video to my mother-in-law, who has taught me some simple ways to ferment rice with and without curd.  The idea is to cook rice in water, primarily you will need to boil rice in a lot of water.
