My Fermentation Philosophy

  People often ask me, "After all these years, what have you learnt from fermentation?" Honestly... Much more than I expected. When I first began this journey, I only wanted to bake better bread. I thought fermentation was simply another recipe. Today, I see it very differently. Fermentation has changed the way I cook. The way I think. Even the way I solve problems. One lesson led to another. And before I realised it, fermentation had quietly become a way of life in my kitchen. Nature Already Knows What To Do One of the biggest lessons fermentation has taught me is trust. We often feel that we must constantly interfere with food. Stir it. Heat it. Speed it up. Control it. Fermentation reminds us that sometimes our job is simply to create the right conditions.
