Raw vs Cooked Carrots: Which Gives More Vitamin A? (What the Research Actually Shows)

If you've ever assumed raw vegetables are automatically the "healthier" choice, carrots are the exception worth knowing about. Multiple peer-reviewed human studies have found that cooked carrots deliver significantly more usable vitamin A than raw ones — and pairing them with a little fat increases that benefit even further. Here's the actual research behind both claims, and how I've put it to use in my carrot idli recipe.  Why Raw Carrots Underperform? Carrots don't contain vitamin A directly — they contain beta-carotene, a plant compound your body converts into vitamin A after digestion. The problem with eating carrots raw is that beta-carotene is locked inside tough plant cell walls, and your digestive system can't break through all of that structure on its own.
