How to Make Kadhai Masala at Home

Masals traditionally prepared by your grandmothers have no match. Learned this aromatic kadahi masala recipe from my multi-talented mother-in-law, who lives in a rustic atmosphere in a village of Odisha. She shares many masala recipes with me. Indian Kadhai Masala Recipe

1 tsp- coriander seeds
1/2 tsp- cumin seeds
1/2 inch - cinnamon
2- green cardamom
2- cloves
3-dry red chillies
1 tsp- kasuri methi
4-5 black peppercorns
8- cahews/almonds (optional)
1/4 tsp fennel seeds (saunf)

Dry roast coriander seeds, cumin seeds, cinnamon, green cardamom, cloves, dry red chillies, and black peppercorns. Let them cool and grind without water.

Add kasuri methi to the powder. When you are making any kadhai recipe, just grind cashews or almonds (I use almonds) and mix with the masala and make a paste with water.

Kadahi masala Lauki recipe:


Take a pan, add oil.
Add garlic-ginger paste. Stir fry
Add chopped onion. Fry well until browned.
Add tomato (chopped or pureed)
Mix well and fry
Add kadhai masala. Fry and then add vegetables of your choice. Cover and cook!
