Here's one simple eggless sugarless cake recipe that can come in handy anytime anywhere. It is one cake that is

Let's get to the recipe of our no bake coconut cake:

Ingredients

1 cup- powdered oats
1 cup- coconut powder (dry)
1 cup- nuts (almonds, pistachios, walnuts)
3/4-1 cup- dates (pitted and deseeded)
1-2 tbsp- cold water 
1/4-1/2 cup- cocoa powder (for that chocolaty flavor for kids - I did not add, as I was making it for someone who is allergic to caffeine---but certainly adding it the next time I make no bake cake for my Paro)

Procedure: How to make eggless coconut cake no bake

Soak nuts in half a cup of water for half a hour. This will help in their better absorption. Additionally soaking will turn them a little soggy, which is exactly what we need for this recipe. 

Pulse oats in a mixer, as we need them in powdered form.

Deseed dates. Let's start with our eggless no bake cake  now.

Grind nuts to powder. Discard the water in which nuts were soaked.
Add dates to the food processor next. Do not remove the powdered nuts.
Pulse the ingredients.
Add powdered oats and coconut. Run the processor again. If you are using cocoa powder, add it now to make a no bake chocolate cake.
Add 1-2 tbsp of water and let the processor run for the final time.
Remove the dough in a bowl.
Start gathering it with hands.
If you have a springform cake tin, you may add the ingredients there and press it with hands until the top flattens. I do not have such a cake tin, so I covered the cake with butter paper and placed it in a plastic container. Keep it covered and pressed with weight in the freezer for 2 hours.
Unmold and decorate the cake.
I served the eggless coconut cake as is without any frosting.
The leftover doubled up as granola bar.
