White or Brown Suji - What's Your Choice?

 You’re often faced with two types of semolina—white and brown. When it comes to making a healthier choice, brown semolina is the better option.

White semolina is made mostly from the endosperm and sometimes a small part of the germ. However, it lacks dietary fiber because the bran—the outer layer of the grain—is removed during processing. Brown semolina, on the other hand, retains the bran, along with the endosperm and germ, making it a whole grain option.



Brown semolina is rich in insoluble fiber, which promotes better digestion, supports regular bowel movements, and may reduce the risk of constipation. Diets high in whole grains are associated with a reduced risk of gastrointestinal disorders.

The fiber in brown semolina slows down the absorption of carbohydrates, leading to a more gradual rise in blood sugar levels. This makes it a better option for people with insulin resistance or type 2 diabetes. Whole grain intake is linked to improved glycemic control.

Whole grains like brown semolina are also known to help lower LDL (bad) cholesterol and reduce the risk of cardiovascular disease. The presence of magnesium and antioxidants further supports heart health.



In terms of nutrients, brown semolina retains more B vitamins, iron, magnesium, and zinc compared to refined white semolina, which loses most of these nutrients during processing.

So, when health is the priority and you don’t want to compromise on taste or texture, brown semolina is the smarter pick.

What is sooji extracted from?

Sooji is extracted from durum wheat during the milling process, usually as a byproduct of making refined wheat flour (maida).

What is Soji mae out of?

Soji or semolina is made out of hard durum wheat grains, specifically from the coarser particles of the endosperm.

What is the process of making Suji?

Suji is made by grinding cleaned durum wheat and then sifting it to separate the coarser particles. These coarse granules, which come from the endosperm, are then dried and packaged as semolina.
