The Hack: Utilize a round, heavy-duty hot pot stand (often used as a matka stand for water pots). The key is its rigid, round perimeter.


Method

Prepare the dough as usual. Knead your ragi roti dough or other gluten-free chapati dough until it is pliable, though it will still lack the elasticity of wheat dough.



Form a rough disc by pressing a portion of the dough into shape.

Lightly flour your rolling surface. Roll out the dough.

Cut a roundel using the pizza cutter or hot pot stand.


The edges will press against the inner circumference of the stand, guiding it into a perfectly round shape. Apply even pressure, working from the center outward.


Once the desired thinness is achieved, carefully lift the perfectly round roti and transfer it to a hot tawa or griddle for cooking.


This approach effectively provides a template, simplifying the shaping process for challenging gluten-free flours. It’s a practical tip that enhances the culinary experience, allowing you to consistently produce beautifully round and delicious ragi rotis and other gluten-free flatbreads with ease.
