Eating Microgreens? Good Idea!!

 "Microgreens are packed with nutrition because the seed puts all its vital energy into those first few leaves. But the big question is—how do we eat them? In India, where traditional meals are more common than raw salad bowls, the best way is to incorporate them into our desi dishes. Remember, 'less is more'—you don't need to consume them in large quantities; a small handful is enough. You can use them as a garnish on dishes like Paneer Bhurji after cooking to preserve their nutrients.



Nutrient Concentration: Research confirms that microgreens contain 4 to 40 times more vitamins and carotenoids than the mature version of the same plant. The seed's 'locked' nutrients become highly bioavailable during this stage.


Heat Lability: Studies show that Vitamin C and specific enzymes in greens are heat-sensitive. Adding them as a garnish at the end of cooking (around 60°C or lower) ensures you don't lose these antioxidants.



Bioavailability: Because they are so concentrated, a small serving (25-50g) provides a significant portion of your daily micronutrient requirements.

When to Harvest Microgreens?


"You’ve grown your nutrient-rich microgreens, but when exactly should you harvest them? In India’s long summers, microgreens grow rapidly, while in winter, growth slows down significantly. The perfect time to harvest is when they are 2–3 inches tall and their 'true leaves' begin to emerge (the leaves that eventually turn into the plant’s larger foliage). The 'True Leaf' Stage: Science kehta hai ki microgreens mein sabse zyada concentration Phytochemicals aur Antioxidants ki tab hoti hai jab cotyledons (pehle do patte) puri tarah khul jaate hain aur 'true leaves' nikalne lagte hain. Iske baad plant ki energy bade patte banane mein lag jaati hai aur nutrients dilute hone lagte hain.

Temperature & Growth Rate: NIH-indexed research ke mutabiq, microgreens ke liye ideal temperature 18°C–24°C hai. Indian summers mein high temperature metabolic rate ko fast kar deta hai, isliye harvest 7 din mein ho jati hai. Winters mein temperature drop hone se enzyme activity slow ho jati hai, jisse harvest mein 10-14 din lag sakte hain.

Flavor Evolution: Jaise-jaise plant grow karta hai, usme Glucosinolates (mustard/radish mein) aur Polyphenols badhte hain, jisse taste zyada 'peppery' ya pungent hone lagta hai.
