Suji Cake in Cooker: Eggless Semolina Cake Recipe


Like me, if you, too, try to avoid refined flour/all-purpose flour, or maida in your recipes, then you surely look for healthy ingredients. Baking with healthy grains can help you inch close to your health goals, if not meet them. After all, processed food is not the healthiest choice. Nevertheless since all of us are too fond of eggless cakes, we can substitute unhealthy ingredients with healthy ones to bake a healthy treat for the kid in us. Of course, these healthy bakes will tempt the taste buds of your kids too. This eggless suji cake recipe is another healthy treat for your tiny tots.

Perhaps your picky eaters will fall in love with these healthy semolina cake if done right. A few years ago, I had no idea how to make a cake, let alone a healthy one. It is history now. Constant experimentation with healthy ingredients has helped me accomplish my health goals while treating our taste buds to healthy treats.

The best part is it got a beautiful golden crust and top and was loved by one and all. The birthday boy, who usually abstains from baked goodies, had two slices. Could I be happier?

Let's come back to the suji cooker cake recipe. Yes, I love baking with suji, because it is a healthier ingredient to maida or white flour. There are a few tricks to bake with semolina flour that I have learned only with experience. Perfect I am not, but yes, I am glad seeing my improvements in the culinary world.

  • Dry roast semolina for a yummier cake.
  • Allow dry and wet ingredients to sit mixed for some time. This gives you better bakes with suji, which absorbs all the flavors when soaked with wet ingredients.
  • Experiment with other ingredients of your choice.
  • Enjoy a healthier cake with suji.
  • Add nuts or tooty fruity or chocolate chips for a kid-friendly cake with semolina or rava.
Easy Semolina Cake Recipe: Ingredients
1 cup- dry roasted suji/semolina (got this idea from my dear friend Anna)
1/4 cup- whole wheat flour
3 tbsp- dry milk powder (to enhance flavor - you may skip if you do not have)
1/4 cup- malai/cream (for a lighter version, use any other vegetable oil/olive oil)
1/2 cup- curd
5 tbsp - sugar powder (more or less as per your taste preference...I take it less sweet)
Roasted nuts
Pinch of salt
1 tsp- vinegar or apple cider vinegar or lime juice
3/4 tsp- baking powder
1/4 tsp- baking soda
cardamom powder or nutmeg powder or any other flavoring agent of your choice.


How to Bake A Suji Cake in Cooker

  1. Dry roast suji. Allow it to cool down.
  2. Mix with milk powder, salt, and cardamom powder. Keep aside.
  3. In another bowl, whisk curd, malai, and sugar powder.
  4. Mix wet and dry ingredients.
  5. Do not add baking soda or powder yet.
  6. Keep the mixture aside for 30 minutes. I kept it longer - 2 hours.
  7. Add baking powder and baking soda and add apple cider vinegar over them.
  8. Mix everything well. If you think the dough is dry, add 1-2 tbsp of water. Ideally this is a very thick dough, unlike the runny batter. Keep it thick.
  9. Meanwhile, heat a cooker and grease a thick bottom steel pan or baking bowl that can fit in within your cooker.
  10. Else you may place a plate in the cooker and keep the baking bowl atop.
  11. Mix roasted nuts with the dough.
  12. Pour the batter/dough into the pan. Pat it well 2-3 times to evenly distribute the batter.
  13. Place the baking pan inside the cooker.
  14. No need for salt or sand.
  15. Cover the cooker with its lid without the whistle.
  16. Bake on high flame for 5 mts.
  17. Then reduce the flame to low and keep it the same for 25-35mts.
  18. Keep an eye on your suji cake.
  19. Allow it to sit in the vessel for 5-10 mts once done.
  20. Take the baking bowl out of the cooker and allow it cool down before removing your suji cake.
  21. Cut once the cake has cooled down completely.
  22. Enjoy healthy tea time suji cake. Perhaps these are healthy bites that you will love.

    1. Thank you dear. Do not forget to use a heavy bottomed vessel for baking..if you use a thin steel pan, the cake bottom might burn. Else, place a plate beneath the baking bowl and then bake. Hope that helps.
