Diabetic Diet Cake With Watermelon: A Vegan Recipe


While people are still debating whether watermelon is a diabetes-friendly fruit, I still stick to my notion that diabetics can have this fruit for its sheer hydration effect. Not only this, the fruit is loaded with minerals, nutrients, and antioxidants that make it a health-friendly food. However, diabetics with kidney issues should avoid watermelon. Anyway, let's come back to the watermelon cake recipe for diabetics. Well, this cake uses another fruit - banana- which even I do not think is diabetes-friendly. But I went ahead with including a banana for this recipe merely to keep the fat content low. I hope you all know that a banana is a good substitute for an egg for an eggless cake recipe.

Since an egg is also loaded with saturated fat, diabetics should avoid it at any cost. So I had to choose between an egg and a banana for this diabetes-friendly cake, and ended up voting for this humble fruit - which is one of my favorites too. Yes!

When you think of a vegan diabetes-friendly recipe, you ought to be careful about:
  • calories
  • sugar
  • carbs
  • fat


This is what makes a diabetic recipe a recipe for dieters too, right?

So when I decided to include my not-so-sweet watermelon in a cake, I wanted to give my diabetic friends a recipe they can relish occasionally. Of course, I would never advise even non-diabetics to indulge in guilty eating daily.

My funda is simple:

  1. Eat healthy - make healthy food choices - a balanced meal works for one and all- diabetics, non-diabetics, dieters, or just about anyone
  2. Reject bad food/fat- choose whole grains,fiber, and unsaturated fat
  3. Quit sugar - choose natural sugar alternatives
  4. Stay active- regular walk until I quit - take a few steps every hour so you do not turn into a couch potato

If you are looking for a diabetic cake recipe for vegans or diet food or something to indulge in guilt-free, go for this simple crimson watermelon cake. What I loved about this simple cake recipe for diabetics was its color - thanks to watermelon (I also added 2 pinches of homemade beet powder).
The cake being a diabetes-friendly uses zero-calorie, zero-carb stevia and semolina from whole wheat.
All in all, it is a cake for dieters and health freaks.

Let's come back to the diet cake recipe for vegans:

1 cup-240 ml
1cup- semolina
1 cup- watermelon+1 banana puree = It was almost 3/4 cup watermelon+1 banana = puree both and set aside
4 drops of stevia
2 tbsp- oil (olive or any seed oil)
Nutmeg powder for flavor
1/2 tsp- baking soda
1/2 tsp- Apple cider vinegar/lime juice/whey water (you may use curd water for a non-vegan recipe)
Beet powder -optional (2 pinches for color)

If you wish to go a step further with the vegan cake, process almond meal with a pinch of salt and water and add 2 drops of stevia to use this as a cake topping. I have added fresh coconut along with almonds. But diabetics would better avoid coconut for its high saturated fat content.

How to make diet cake with semolina for vegans

Make a puree with watermelon and 1 banana. Add nutmeg powder and oil and whisk again. I ran this in my mixer/processor.
Gradually add semolina to this watermelon puree. Take a taste test. If it feels less sweet, add a few drops of stevioside. I added 4 drops only. But sweetness varies from one stevia product to another. I use organic stevia.
Preheat oven/mw convection at 170 degrees for 10 minutes.
I tried it on a stovetop. Take a cooker and add a layer of sand/salt in it.
Place a stand on top of the salt layer. You may keep a small steel bowl as well if you do not have a cooker stand handy.
Turn the flame on high and keep the cooker covered with its lid. Remove the whistle/weight and gasket.
Add baking soda and vinegar to the batter and mix gently.
You may add nuts to the cake to add to its nutrient quotient. For me, it was merely an experiment and I did not want to waste nuts if the trial went wrong. But I feel nuts can be added to enhance flavor.
Pour in a greased baking pan and bake on high for 5 minutes and then lower the flame and bake the cake for 45-50 mins. Yes, it took me that long to bake this watermelon cake in cooker.
If you choose to bake in an oven or convection, then bake it for 30 mins first and do a skewer test. If the cake looks unbaked from the inside, bake for 5-10 mts more.
Allow the diet cake a resting time of 5 mins and then remove it to cool down.
Please do not touch before the diabetes-friendly cake has cooled down, as it might crumble.
PS: As a diabetic, if you may want to avoid a banana in the cake recipe, you can add 2 more tbsp of oil instead. However, I feel it is better to include a banana than oil. Or another healthier alternative would be nut butter. You may want to try the diet cake with almond butter to substitute banana.
