Eggless Sesame Seed Cookies Without Raising Agents: How To Make Oatmeal Delicious


Sesame seed cookies without raising agents are going to be a real treat for biscuit lovers. When someone who was never too interested in cookies loves to munch on your whole grain baked beauties, this shows you have done justice to  the recipe.If you are looking for no raising agent recipe of cookies, then this is just another addition to my long list of no baking powder, no baking soda cookies. I am glad I keep experimenting with different combinations.  I rarely try out my own recipes the second time, because I am wearing the thinking cap all the time and want to experiment with next combos. But this sesame seed recipe is just akin to my eggless cashew cookie recipe, because I was getting constant feedback from one friend, whose cookies were failing her following the cashew cookie proces. So I had to go back to my cashew cookies to see if there was something that could be improved in that recipe. The only difference then and here is the type of wet ingredients used - I have substituted half of ghee there with olive oil here.

 This is another one of my cookie recipe without raising agents that was loved by one and all. Just like other cookie posts, let's do a recap on oat benefits and also sesame seed benefits. I will also do a recap on why you should quit maida/all-purpose flour.

This is one of the many reasons you find my recipes focusing on eliminating or reducing saturated or trans fat. Since ghee or clarified butter has trans fat and is loaded with saturated fat, I try to combine it with olive oil to reduce the fatty content in my recipes. I never buy ghee and make it at home from scratch.

Ingredients
I cup measures 235 ml = 16 tablespoons

1 1/2 cup- powdered oats/oatmeal (I prefer Patanjali oats that are grainier than most other brands in India)
1/2 cup- whole wheat flour
4 tablespoon- ghee (clarified butter- cold - I keep my ghee in the refrigerator for cookies)
4 tbsp- olive oil or any neutral oil
2 tbsp- sesame seeds (I have used white - you may use black too)
nuts of your choice- I have added roasted almonds and pistachio
2-3 tbsp milk/curs
2 tbsp- almond meal
1/2 cup- jaggery powder (more or less depending on your taste buds) (or raw cane sugar - I have stopped buying white sugar so you won't see refined sugar on my ingredients)

How to make no raising agent sesame seed cookies with whole wheat, oatmeal

Sift through both flours and set aside.
Take a deep bowl.
Add cold ghee and oil to it.
Next throw in dried jaggery powder.
Whisk the mix until your arm starts to pain. Yes, you have got to do it. Else whisk until the mix becomes pale in color. Now add 2 tbsp of milk. Whisk again until you cannot spot milk. You may add curd instead of milk.
Since we are using jaggery and it tends to form grits, I ran the mixture in my grinder/mixer after the buttering process just to make sure jaggery dissolves completely. I succeeded in the experiment. Jaggery grits were fully dissolved.
Next stir in the flours - after adding half of the flour mix, use your spatula or even whisker to fold the ingredients.  It will be a complete mes - worry not. Now add the remaining flour mix.
Mix gently and do not knead.
PLEASE NEVER EVER KNEAD COOKIE DOUGH. When you knead flour, gluten formation happens. Gluten gives you chewy cookies. If you want to enjoy crispy bites, never knead cookie dough. Kneading will also disturb the air pockets created in the wet mix and make your cookies dense - just like a cake.
Throw in almond meal, nuts, and sesame seeds and mix gently.
If the mix looks hard at this moment, add the remaining 1 tbsp of milk. If it looks soft or very soft, worry not and proceed to the next step.
Just keep this mix covered aside for 30 minutes.
Preheat the oven to 170 degrees for 10 mts. Or preheat the airfryer for 5 mts.
This is an airfryer cookie recipe for me, but you can always bake these sesame seed cookies in an oven or convection.
Roll out the dough -1/4 inch thickness - should be three-four times the typical roti, but not too thick, because the thicker the cookies, the softer they might get from within. So never bake too thick or too thin cookie. You may find the dough a little tough to work with - because of the amount of oats used in my recipes. But if you carefully handle the dough, you are good to go to the next step.
Place on a greased and floured baking tray at an even distance.
Bake/airfry at 170 degrees for 12-15 minutes.

    1. Well, you can grind almonds to powder and add. Or just add 1 tbsp extra of oats. Hope that helps.
