Refined Sugar-Free Quinoa Digestives: Fiber Rich, Nutrient Dense, Sugarless Quinoa Recipe



Have you heard of quinoa digestives? I did an Internet search to find it out, but couldn't trace any quinoa digestives recipe. Perhaps we have yet not moved to supergrains when it comes to digestives. When it comes to digestives, most of us can't think beyond whole wheat flour and oats. Perhaps dgestives require fiber-rich oats because it gives the biscuit the perfect digestives structure. I love oats so much so that I have compiled a collection of over 200 oats recipes. Now coming to quinoa digestives recipe, I have tried out too many digestives, including amaranth digestives, pistachio digestives, Mcvities digestives, and Nutri choice-like digestives. This time I wanted to skip whole wheat and include quinoa. Yes, if you remember, I have already shared a few quinoa recipes here, including quinoa nankhatais without baking soda/baking powder.

My goal with each recipe is to get the better out of me! 

Quinoa substitutes whole wheat


Yes, my dear friends, quinoa digestives include:

  • supergrain quinoa (do check out my sprouting series that includes how to sprout quinoa and make sprouted quinoa flour at home)
  • fiber-rich oats (I have said a lot about oats in all of my recipes- do check our fat collection of 200+ oats recipes
  • barley or jau flour (I often substitute whole wheat with barley in some of my cookie recipes - do check our huge collection of 100+whole grain cookie recipes, including vegan and gluten-free options)
  • mineral-rich jaggery powder
What type of digestives is it?
Well, the addition of quinoa in this digestives recipe gives it a subtle nutty flavor. You will love to dunk it into your tea, coffee, or milk. Or want to indulge in this quinoa goodness just like that!

Quinoa digestives - The best digestives ever! 
Fiber rich, Nutrient dense, and refined sugar free :)

I know I know I had posted another of my "best digestives recipe," but this one is another take on digestives sans whole wheat flour. The addition of superfood quinoa takes the digestives to another level.

Ingredients
1 cup- oat flour/powdered oats/oatmeal
1/4 cup- quinoa flour
1/4 cup- barley flour/jau (if you do not have barley, add any other flour that you have or simply substtut with the same amount of quinoa flour)
1/4 cup+2 tbsp jaggery powder (add more if you have a sweet tooth or add raw cane sugar instead)
2 tbsp- wheat bran/husk (or 1 tbsp oats extra if you do not have bran handy)
2 tbsp- almond meal or powdered almonds (check here how to make quick almond meal at home)
3 tbsp- cold/solid ghee/butter
1 tbsp- olive oil (or add 1 tbsp butter extra and skip olive oil)
3 tsp- curd/yogurt
1 tbsp- whey or milk
1/2 tsp- baking soda
1 tbsp- toasted sesame seeds


How to Make Quinoa Digestives Refined Sugar Free


Sift quinoa flour, oatmeal, barley,  bran, and baking soda.
Next, sift almond meal and jaggery. If you are left with some almond and jaggery grits, remove to a bowl and add curd to it. Keep this curd mix aside.
Now, it's time to add ghee and oil to the sifted flours.
Start rubbing with hands. DO NOT KNEAD.
The flour-butter mix should look like wet sand/ bread crumbs. You should be able to take some amount of it in your fist and it should retain shape.  Check the video please.
Add the curd mix and start binding the dough. 
If it is difficult to bring the dough together, add 1 tbsp whey or milk.
Sprinkle sesame seeds and mix.
Keep the dough covered for 30 mts. I did not feel the need to refrigerate. You may do so if you want to refrigerate.
Preheat the oven/airfryer/convection to 170 degrees for 10 mts.
After 30 mts, roll out the dough into a thick chapati, cut shapes.
Place each cookie at a distance from the other for even heating/baking from all sides.
Bake/airfry for 18-22 mts for 170 degrees. Took me 22 mts to bake these quinoa digestives.
Temperature settings may vary from one appliance to another. You know your machine better :) 
So start baking right away and indulge in the quinoa goodness!

    1. Thank you for stopping by. For this recipe, the cup measures 235 ml. In fact, all of the recipes linked on this page use 235ml. My previous bakes used 175ml cup. I will update my recipes with the cup size.

    1. hey dear..thanks for connecting...these biscuits stay good for at least 7-10 days..i dont make big batches...but a girl who follows my recipes bakes for a month in advance and says the cookies stay good.

    2. Thanks for your reply. How much is one cup of oat flour? Usually, I weigh out 1 cup oat flour comes to 90gms.
