Sweet Whole Wheat Baked Kachori in Airfryer [Healthy Indian Snacks Recipe by Ravneet Bhalla]

Of course, we have already learned, tried and tested healthy cookie recipes without maida, Baking powder and soda and of course, refined sugar. Let's take our healthy baking adventure further and try our hands at turning unhealthy traditional recipes into their healthier alternatives. Today's recipe is all about baking whole wheat mawa kachoris without mawa with whole wheat flour in airfryer. No, I do not deep fry anything. 



Deep-fried food is high in trans fat and calories. When food is deep-fried, it loses moisture and absorbs fat from oil. 1 tsp of oil has almost 40 calories. Imagine the number of calories you take in when you fry food in oil. Excess calories equal access fat accumulation. When you eat deep-fried food, you tend to raise the risk of trans fats in your body. How? When a food item is deep-fried, the chemical structure of oil changes. As a result, it gets difficult for your body to break down such fats. This puts you at high risk of fat accumulation in the body, further increasing the risk of obesity, heart disease, cardiovascular disease, cancer, and diabetes.

Before jumping right into the recipe,  let's do a quick overview of why you should avoid maida or refined flour.
Well, I have talked a lot about maida versus whole wheat all these years. My blog mercuryimp.com is a testimony to the fact that I never use all-purpose flour.

One big reason is that maida or refined flour or all-purpose flour is drained of all nutrients, chemically bleached, and full of starch. It's empty calories and ZERO nutrition.  So when you eat maida products, you want to eat more, since it lacks fiber and there is no feeling of fullness. You end up guilty indulgence.

On the other hand, whole wheat flour comprises endosperm, germ, and bran, which makes it a complete ingredient in itself. It packs all the nutrients, minerals, B vitamins, and fiber. So when you consume a whole wheat-based goody, you will get nutrition to ward off illness and strengthen your immune system.

But that is not the case with maida, since it is refined and bleached and zero nutrition, so when you indulge in refined flour, your body becomes less capable of fighting illness because it is nutritionally deficient.

That is the reason I NEVER buy maida or refined flour. Rather, I try to reach out to whole grains, millets, and pseudocereals that pack a powerful nutritional punch.

Say no to maida, friends, because we can replicate maida-based goods at home with alternative yet healthier options. 

Let's make a whole wheat kachori - sweet of course - which makes an ideal healthy snack for kids and preschoolers and elders too. There is no reason why you cannot enjoy traditional sweets and snacks in a healthier avatar.

Everyone in the family loved this version of baked kachori. There is no reason you won't!
So what are you waiting for? Let;s see how to bake a healthy kachori in airfryer. You may bake this snack in oven, otg, convection or even on stovetop (cooker/kadahi).
Ingredients
1 cup- 240 ml
1 cup minus 1 tbsp- whole wheat flour
1 tbsp- semolina
1/4 cup+2 tbsp date palm jaggery or sweetener of choice
2 tbsp- cashew butter
8-10 almonds
2 tbsp- dry coconut
3-4 green cardamom pods
1/4 tsp- salt
3 tbsp malai or cream
2-3 tbsp- water
2 tbsp cashew butter

How to make sweet kachoris with atta in airfryer 



For this simple recipe of kachori, you need 1 cup of whole wheat flour minus 1 tbsp. Add 1 tbsp semolina. You may use the best quality wheat flour available. 
Add 3 tbsp of malai or cream that floats on top of boiled milk to it. If you do not have malai, use ghee instead. For a vegan kachori recipe, please use oil instead or cashew butter.
Then 1/2 tsp of salt goes in. Mix well and start rubbing the flour with the fat.  This step is important. So do not hesitate to spend 2-3 minutes here.
Take a little amount of the buttered or greased flour into your fist. If it holds its shape, that's it. You have done a great job. You can start dreaming about healthy yummy kachoris at this stage.
Add water. I added 1 tbsp at a time until I got soft dough. But remember not to make it too soft. Your kachoris would become rotis. I have used 2.5 tbsp of water. The amount of liquid might vary from one flour to another. If yours absorbs a lot of moisture, you may need up to 3 tbsp for the atta dough. 
Let the atta kachori dough rest for 30 minutes covered with a moist cloth.
Meanwhile, let's prepare the filling, which adds yumminess to the baked atta kachoris. 
You will love everything about it.
Take 2 tbsp of almonds or 8-10 in number.
Pulse to coarse powder.
Next add 2 tbsp of coconut powder, 2 tbsp of cashew butter or powder and 1/4 cup+2 tbsp of date palm jaggery. I buy from local sources in Odisha, which is 100% pure. 
I added all this to the grinder jar along with 3-4 green cardamom pods. Pulse everything to powder. 
Remove in a bowl.
Let's make kachoris now.
Preheat oven, airfryer, otg, convection to 200 deg c for 5 minutes.
Make lime-sized balls of the dough. Flatten one with a rolling pin.
Take 1 tbsp of the filling. Fold all ends as shown. Cut excess dough.
Flatten gently.
Press with a rolling pin. Our puris are ready. Do not keep them too thin.
Place in an airfryer basket and bake at 200 deg c fo 5-8 minutes. I kept for 5 minutes first and then for 3min more. 
Check the bottom. If it does not look baked fully, flip side and bake for another 3-4 minutes.
When you open the airfryer or otg, you will love the sight of puffed-up kachoris.
