buckwheat crackers
All of us love snacks. But some of us are always on the lookout for healthy snacks. I have come up with a healthy snacking recipe for you all, using kuttu atta (or vrat atta).

Kuttu/Buckwheat snacks
3/4 cup- kuttu atta/vrat ka atta (Buckwheat flour)
1/4 cup- besan (gram flour/roasted chickpea flour)
1/2 tbsp- oats (optional)
2 tbsp- olive oil (or any vegetable oil)
4-5 tbsp- cold water
1/2 tsp-sesame seeds
1 tsp- flax seed powder (roasted)
red chilly powder
salt as per taste
1/4 tsp- kasoori methi (powdered with hand)/ dried fenugreek leaves
1 tsp- cumin seeds
2 pinches- carom seeds (ajwain)
1/4 tsp- baking soda

Procedure

  1. Preheat oven at 180 degrees for 6 mins.
  2. Sieve kuttu atta, besan, and baking soda.
  3. Add powdered oats.
  4. Add all the spices and herbs (you may choose any herbs you want).
  5. Add salt.
  6. Now add, olive oil. Rub the flour with your hands.
  7. It's time to add chilled water to make a dough.
  8. Do not knead. Just gather the ingredients.
  9. Flatten the dough with a rolling pin (it may stick to the belan - but that's okay).
  10. Give shapes.
  11. Bake for 15 mins at 180 degrees.
  12. I use microwave convection mode for baking.

Eggless Cake Without Raising Agents: A No Baking Powder, No Baking Soda Sponge Cake Recipe

When you are able to bake an eggless cake without raising agents, your happiness knows no bounds, right? This is exactly what I am in for today. What started as an experiment has worked out wonders for me.

I was trying to hone my cake baking skills while learning a few baking basics. Then struck this idea of baking a cake without baking powder or baking soda. A loved one is suffering from histamine sensitivity, and these chemical agents trigger urticaria, which gives me goosebumps. So I decided to go the other way round - baking an eggless cake without raising agents.

You need a light flour here - something that would effectively replace maida/all-purpose flour/refined flour/white flour. I remember one dhaba wala telling me once about how they replace maida sometimes - using a mix of jau and rice flour.

So this is exactly what I needed. This has given me one of the simplest yet tastiest cakes. Please do not change the flours, as I am unsure how any other flour would work here. I will…

Instant Aam Papad (Sada) With Jaggery: Sweet & Tangy Mango Slices

Aam papad has been a hot favorite since childhood. I do not remember how many times I have enjoyed these sweet & tangy mango sheets, though no one from my mom's side ever tried making them at home. After marriage, my mother in law, who is an awesome cook, made these savory & sweet mango pulp slices for me. I must tell that she makes the best mango pickle in the world - which is both sweet & sour. She made two buckets full for me after she found that I love aam achaar.

Who does not like sweet and tangy mango leather? Our generation has grown up relishing aam papad- wonder what all the present generation is missing out on! So this instant aam sada or papad recipe was born after my dear friend Poonam Bachhav had shared her aam papad post. Her post was the ultimate trigger for me to come up with my own instant Odia version. Poonam is the real Annapurna. I love the way she picks healthy ingredients to cook up deliciousness in the kitchen. Poonam blogs at Poonam Bachaav dot…
