The sweet biscuits from New Zealand and Australia came into being when wives of warriors and soldiers would send Anzac biscuits to soldiers on duty. The oatmeal cookies were especially chosen because they would not spoil easily and had a long shelf life.

This is an eggless cookie recipe, which omits eggs due to the scarcity of eggs during the time of war.

How to make oatmeal delicious with Anzac Cookies

Line up a baking tray with parchment paper or grease it.
Heat 1 tbsp of water and add baking soda to it. Keep aside.
Heat ghee and oil together in a pan.
Stir in baking soda-water mixture.
It will get frothy.
Add raw cane sugar and honey.
Stir in all the flours and coconut powder one by one.
Mix everything with hands.
Roll into small balls and flatten. The dough may feel crumbly but you can still make balls with hands or put them in an ice cream scoop and place on a baking tray. Else, you may add little amount of milk or water to bind it.
Bake in a preheated oven/microwave convection at 170 degrees for 8-10 mts.
Allow the Anzac biscuits to cool on a cooling rack before munching on crunchy bites.
